Good New Orleans Creole Gumbo

This gumbo is fantastic!!! I made a few mods: replaced beef broth with homemade shrimp stock and left out the crab. The spice level was perfect to a bit spicy for my taste buds. I will definitely make this again.

Old Fashioned Onion Rings

These onion rings turned out great! I used a large pot and a thermometer to monitor canola oil temp. Nice and crunchy. My only complaint is that 1/4 inch is too thin, so next time we'll be cutting these much closer to 3/4 - 1 inch thick.

Very Easy Mushroom Barley Soup

Yum! I followed the recipe as exactly as possible, using Pacific broth and pearl barley. I thought I might miss the beef, but I didn't at all. This is a hearty, healthy soup that would be great with a salad.

Chicken Makhani (Indian Butter Chicken)

I adjusted the seasoning to my own taste (added more cayenne) and availability of ingredients at my house on the day of preparation (used ground ginger, skipped the yogurt, used lime juice instead of lemon). I also added more of my homemade garam masala than called for, skipped the extra cumin and added 1/2 tsp of fenugreek to the recipe. I didn't add cornstarch because I liked the consistency of the sauce without it.

Chocolate Mousse I

Yum! I used bittersweet Ghirardelli chocolate pieces and Frangelico hazelnut liqueur instead of rum. We first mixed about a third of the egg whites into the chocolate with a whisk to make the incorporation easier. In erring on the side of caution for fear of losing volume, we probably didn't fold the whites in as much as we should have. There were some small chunks, but honestly the mousse was still fabulous, light and airy!

Hummus III

The recipe is a bit too dry as written. Next time I would add some liquid from the canned beans and perhaps more lemon to thin it out.

Pastry for Double-Crust Pie

Solid. This was my first time making pastry for a pie. Since the pie was savory, I used bacon fat that I rendered myself (we save bacon fat in this household) and the crust was sooo flaky with a slight bacon aroma.
