Unbelievable Chicken

Reviewed: Jun. 8, 2014
So juicy and delicious! I added some cumin to the marinade. After grilling, I sliced up the chicken and used for soft tacos. I agree with other reviewers that this also makes great chicken salad.

So easy. I never would've thought of combining these ingredients, but it was delicious. Served it with mashed potatoes.

Cedar Planked Salmon

Reviewed: May 26, 2013
AMAZING!!!! First let me say that I eat a lot of salmon - love the stuff! I've had cedar-plank salmon at restaurants and have blackened/baked/broiled it at home. This is the first time I've ever tried cedar-plank salmon at home, and let me tell ya, this was the best salmon I've ever had!! Secondly, I usually treat recipes as a guideline; I've been cooking for many years & I know what works well for my family's tastes, so I usually alter things a bit. This recipe didn't need any adjustments...PERFFECT! Thank you wmore :)

Meatball Nirvana

Reviewed: Feb. 19, 2013
I don't eat beef, but wanted some good meatballs for my beef-eating family. I used panko crumbs because they are just simple ingredients: wheat flour, dextrose, yeast, salt (the regular bread crumbs were made of bread containing high fructose corn syrup and lots of additives). Like LTH suggested, I also used dried minced onion to omit the step of chopping an onion. I was out of milk, so I used 2 eggs and a splash of half 'n' half in a triple recipe. Froze the leftovers. My family says they're WAY better than store-bought frozen meatballs!! Thanks LTH!

The World's Best Turkey

Reviewed: Dec. 24, 2012
This turkey came out very moist and flavorful. I added a few cloves of garlic, rosemary, tarragon, and sage to the cavity, and also added sliced onion and celery to the bag. The drippings made great gravy, and cleanup was so easy from cooking the turkey in the bag. To answer other questions about this recipe, I cut slits in the bag just as instructed on the box, and it came out perfectly.

Snickerdoodles

Reviewed: Dec. 21, 2012
Snickerdoodles are my dad's favorite cookie; I used to make them often. These are the best snickerdoodles I have ever eaten! I don't bake often, so my staple ingredients (flour, baking soda, etc.) tend to expire. My high-altitude flour (I live in CO) expired 3 months ago, and who knows how long I've had my baking soda... However, I don't scrimp on cinnamon!! I use Vietnamese cinnamon from Penzey's Spices. It is the most fabulous cinnamon and really makes these cookies stand out. My cookies came out fluffy & perfect. I also used the butter-flavored Crisco and added a tsp of vanilla as other reviewers have done.

Lemon Cake

Reviewed: Sep. 19, 2012
My husband loves lemon cake, and the lemony-ness of this one was a hit! I'm not familiar with 1oz. packages of pudding mix, and couldn't find any, so I used the regular 3.4 oz. pkg of instant lemon pudding mix, and increased the milk to 1 cup. Turned out great!

Butternut Squash Soup with a Kick

Reviewed: Jan. 15, 2012
I didn't have jalapeƱos on hand, so I used a dash of cayenne. I also used brown sugar instead of white, and added a generous dash of cinnamon. Didn't have the coconut milk on hand, but I did have some apple juice, so I substituted there too. I look forward to trying it with the coconut milk. I garnished my bowl with roasted walnuts and fresh parsley. Yum! Thanks for the recipe!

Homesteader Cornbread

Reviewed: Jan. 3, 2012
I've never been a huge cornbread fan, but this one is excellent!! I let the cornmeal & milk sit for 5-10 minutes, mixed everything by hand for 5 minutes as several people recommended, then I baked it at 375 for 30 minutes. It came out light, fluffy, & perfect.

Yummy! I substituted 1/2 the butter for butter-flavored Crisco. At Christmastime, Andes Creme de Menthe chips are available, so I made this recipe with 1 cup Andes and 1 cup white morsels. They were a hit!

Baked Pears

This is very good! I had neither lemon juice nor orange marmalade, but I did have orange juice, which i drizzled over the pears. I also sprinkled on walnuts prior to the cinnamon/sugar.
