Lemon Cornmeal Cake with Blueberry Sauce

This is the first time (but not the last) I made a cake using cornmeal. Cornmeal adds a nice texture element that you don't usually find in a cake. The glaze is the perfect addition and the blueberry sauce sends it over the edge. This is one of those "must try it" recipes! :) 


Remember to keep the glaze thick, do as the instructions say, rather than being tempted to create a drizzle. You want this to spread across the top of the warm cake so thickness is key. If you have extra blueberry sauce, save it in the fridge, serve it over pancakes or stir it into yogurt. Yum!

You know that looks really good. I'm curious is it as sweet as regular cake? If it is not I would probably love it.

No it's not as sweet, that was one of the things I liked about it. The glaze is pretty lemony too, so the sweet tart glaze and the sweet blueberry topping are a great combo with the cake! :)

My favorite family cooking traditions
I grew up in the convenience food era. My parents were divorced and I was a latch key kid. There weren't a whole lot of home cooked meals in my childhood, but lots of packaged and frozen goods. I try to make dinner every night for my family, though sometimes it's take out due to sports activities, etc. I'm envious of those that have their grandmother's recipes, I don't have anything like that.
My cooking triumphs
i've created a few recipes of my own, one I even won a contest for :) I love experimenting and finding new ways to combine flavors. I feel triumphant every time I bring something to my neighbors, they always give me rave reviews!
My cooking tragedies
I try to prepare whatever I can early in the day, so that the hectic afternoon is less... well, hectic! I tend to be pretty frugal, so I'm always pantry diving. I also menu plan every week, it saves me from A) running to the store in the middle of the week and B) getting take out.
