Shredded Beef and Chile Enchiladas

Do you like Mexican food? I adore it, love it, and would eat it everyday if hubby would tolerate it. I found a magazine from Better Homes & Gardens, one of their special interest publications, called Ultimate Mexican. It's a collection of authentic recipes with some awesome photos of Mexico to boot. 

I've already made several recipes from the magazine including:

Conchas - Mexican sweet bread
Champurrado - thick Mexican hot chocolate
Spicy Grilled Chicken with Black Beans and Rice

Everyone of them was delicious, no failures yet! This recipe for shredded beef and chile enchiladas is definitely no exception to that rule. It was delicious and I will most definitely make it again. Now that the weather is starting to cool off, I'll be looking for more comfort foods to serve for dinner. This will definitely be in my permanent recipe file!

We love Mexican food also, and have a Mexican cookbook with wonderful recipes... But, I saved this recipe to make for my family; just could not resist! LOL... Thanks so much once again for a good recipe with great photos Amanda!

About Me
My favorite things to cook
I love baking, especially cookies and cakes. :) I love cooking too, but I like to experiment, which can occasionally mean take out! ;)
My favorite family cooking traditions
I grew up in the convenience food era. My parents were divorced and I was a latch key kid. There weren't a whole lot of home cooked meals in my childhood, but lots of packaged and frozen goods. I try to make dinner every night for my family, though sometimes it's take out due to sports activities, etc. I'm envious of those that have their grandmother's recipes, I don't have anything like that.
My cooking triumphs
i've created a few recipes of my own, one I even won a contest for :) I love experimenting and finding new ways to combine flavors. I feel triumphant every time I bring something to my neighbors, they always give me rave reviews!
My cooking tragedies
I try to prepare whatever I can early in the day, so that the hectic afternoon is less... well, hectic! I tend to be pretty frugal, so I'm always pantry diving. I also menu plan every week, it saves me from A) running to the store in the middle of the week and B) getting take out.
