Chicken Scallion Stir Fry

Stir fry should be a food group, don't you think? i absolutely love it, but sometimes it can be hard to find recipes with the right sauce consistency. I've tried many recipes where the sauce is too thin, even if it does taste good. Chicken is bar none my favorite meat for a stir fry, and this particular recipe is in my top ten! The gravy is perfect and flavor is spot on. 

You can of course substitute other vegetables for the scallions as well. A delicious dinner we'll be having quite often around here!

Your stir fry looks lovely. I'm sure you realize that you can add some cornstarch mixed with a little bit of water to thicken your gravy, right? You can throw in any veggie that you have on hand in addition to scallions.

Hi lace :) Yes I know about that :) It's not needed with this recipe though, this makes a nice sauce. The other recipes that I was talking about do yield a thinner sauce causing me to HAVE to add cornstarch, it was just nice to find one I didn't have to fix! :LOL

I love baking, especially cookies and cakes. :) I love cooking too, but I like to experiment, which can occasionally mean take out! ;)
My favorite family cooking traditions
I grew up in the convenience food era. My parents were divorced and I was a latch key kid. There weren't a whole lot of home cooked meals in my childhood, but lots of packaged and frozen goods. I try to make dinner every night for my family, though sometimes it's take out due to sports activities, etc. I'm envious of those that have their grandmother's recipes, I don't have anything like that.
My cooking triumphs
i've created a few recipes of my own, one I even won a contest for :) I love experimenting and finding new ways to combine flavors. I feel triumphant every time I bring something to my neighbors, they always give me rave reviews!
My cooking tragedies
I try to prepare whatever I can early in the day, so that the hectic afternoon is less... well, hectic! I tend to be pretty frugal, so I'm always pantry diving. I also menu plan every week, it saves me from A) running to the store in the middle of the week and B) getting take out.
