Cherry Chicken Lettuce Wraps

I made a serving of four of this. Wow! Really delish! I almost skipped the cherries since I didn't have any on hand. It was worth the trip to the market. DON'T leave these out! I will make this again and again!

Italian Marinated Chicken

I marinated in low calorie Italian dressing for three-something hours. Then I heated some white wine instead of oil in a frypan, cooked it on medium heat until the outside was no longer pink. Then I set it to low heat, covered it and let it steam for about 10 minutes-ish. WOW! Juicy and flavorful! Hubby couldn't believe it was *only* Italian dressing for the marinade. Paired with some broccoli and rice. Thanks!

Ham Potato Puffs

Since they don't sell tubes of baked breads where I live, I had to make the dough with Bisquick my mum sent me. One prpped portion was perfect and I had no problem with getting the dough up the sides. (I did however put too much dough in each perhaps, forgetting about the rising factor!) I made a portion of mashed taters from 3 medium potaoes, otherwise following this recipe to the letter. My husband went crazy for them, and he's not a huge fan of Western foods. The ham I used came from a larger cut, so I sliced the extra ham into "steaks" and cooked them in sugar-free maple syrup in a skillet. Use the syrup glaze to dip the bicuits in...yum!

Campbell's® Easy Chicken and Cheese Enchiladas

First of all, let me say that this came out amazing! The main thing I changed was I used Cream of Jalepeno soup, and wow! I subbed the sour cream (hard to find and pricey here in Japan) for a equivalent blend of cream cheese and plain yogurt. Also, I used no-fat butter spray and some white wine to "fry" the chicken, along adding diced onions and 1/2 a packet of taco seasoning. I omitted the chopped tomato, too, simply because I didn`t have one on hand. Other than that, I followed the original instructions. I did add the black beans like a reviewer suggested, excellent! Also, definately seam side down, but watch out, I over-stuffed, and some mix tended to plop out. The ends came out dark, but because I brushed a little yogurt on them, they stayed soft. My husband is a fast eater, but I`ve never seen him eat so dang fast! And make "mmm!" noises the whole time! Homerun!
