Eggplant Parmesan II

Like there needs to be another review on this recipe, but I just have to review it bc I am so happy! Made this last night for dinner. AND I was making it for an Italian friend of ours whose family owns a fabulous Italian restaurant. I was either being stupid or very brave; ESPECIALLY not frying the eggplant! Thank God I was being brave. Everybody LOVED it. I am so thankful for this recipe. After coming out of the over (450 degrees for 7 min on one side & 5 on the other) I couldn't stop eating the eggplant. So awesome. But our Italian friend said bc it wasn't fried he could eat more of it. AND boy did he eat:) The only change I made in this recipe was what I stated about temp and cooking time. Oh, and our friends wife (who is our friend, too..lol) could not believe I was able to get the eggplant so crunchy without frying it!

Brooke's Best Bombshell Brownies

Oh my gosh...Heavenly is all we can say. Made this as stated except using both white and brown sugar. If you want just the yummiest fudgy brownies this is your recipe! Thank you so much for sharing. I have a smile on my face as I am writing this. I'm pathetic:)

Chef John's Raw Kale Salad

I just made this for my VERY VERY VERY picky salad eating husband...(he is wonderful in many other ways though:-)) He said, "I would definitely eat this again." Score! He will not eat any fruit in his salads so this was huge. I too used the Muscat Vinegar from TJ's: half of this and 1/2 rice vinegar. Toasted some almonds..yummy. Thanks for this recipe! It's difficult to find ways to use kale so this is a keeper!!

Thanksgiving Leftovers Stuffed Shells

CRAZY!! I mean really, who would have ever thought. I made this last night w/much trepidation! The thought of it just did not sit right w/me. I mean, stuffed shells are not made with turkey people! But I trusted the reviews and went for it. All of us loved it! We had wonderful (if I may say so myself..lol)leftovers from Thanksgiving and this dish was great. We have a full Italian living with us so I was very nervous about serving this dish and he loved it. Really great idea! Thanks

Baked Teriyaki Chicken

My family LOVED this!! I took 3 large chicken breasts and just dumped all the above ingredients (marinade) in a plastic bag and froze it. Took less than 5 minutes! When we were ready we defrosted the chicken, cut it up in pieces and had an incredible stir fry. EASY and so yummy! Added 3 cloves of garlic and a tsp of fresh ginger.

Mom's Buttercream Frosting

Not all that thrilled with this recipe. I think I definitely have to make some alterations because it tasted a lot like shortening to me. I think it has potential but not as written. Next time I make this I will implement some of the ideas in the views but I was in a pinch and just made it as is.

Crazy Cake

Had friends over last night and needed a good easy desert. We all really enjoyed this...very good & very easy. I put peanut butter chips in at the last minute on a whim and it was great. Followed the recipe except I decreased the sugar to 1 1/2 cups and I never use oil, but applesauce instead. Thanks!!

Absolutely a new staple and family favorite!!! Love this recipe. Pretty much made as stated except added lots more spinach, garlic and included diced tomatoes and shrooms. YUM!

Debdoozie's Blue Ribbon Chili

Are you kidding me?!! Yummy!! 10 stars here...for flavor and for how easy it is to make. Made it for superbowl as I had a baked potato bar...no chili left! Not a morsel. I never follow recipes to the T, but I did w/this one! Well, that's not really true. I could not find that brand of Chili seasoning at any of my local stores. So, I made the Chili Seasoning Mix II from this website. Home run baby!! Oops, sorry that's not football lingo:-) TOUCHDOWN!

Beef Tenderloin Steaks Topped with Horseradish and Dijon Mustard

Just finished eating this....take it or leave it? Considering it is beef tenderloin I will leave it bc I want a fabulous recipe for this piece of meat. It was just okay. The only change I made to the recipe was to only use an 1/8 tsp of each of the dried herbs (bc of all the reviews stating the herbs were too overpowering). I am glad I did!! But, will continue my search for another recipe, but thanks for posting!

Peanut Butter Cup Cookies

I usually make about 5-6 different kinds of cookies to give to friends and family for Christmas. Each year I will add a new cookie. Well, this cookie was THE hit this year. Everybody wanted the recipe. Scored me lots of points with my hubby who LOVES just regular pb cookies...but this just kicked it up a notch with the pb cup in the center. Only changes: I froze the pb cups like suggested and used a regular cupcake pan with petite cupcake liners...PERFECT. Thanks:-)

Hungarian Mushroom Soup

Wow, this was really good!! I did add reconstituted crimini and shitake mushrooms and the liquid they soaked in & smoked paprika as another reviewer suggested. I also did not want all the extra calories of the sr. crm and didn't have yogurt on hand so I used 1 Tbs of sherry, 1 tsp of caldo de pollo and a tsp of both garlic and onion powder. Yummy:-)

Garbanzo Bean Chocolate Cake (Gluten Free!)

Oh my....not very good at all! Out of 8 of us only 1 liked this recipe:-( I don't particularly care for canned beans so I used another reviewers suggestion and soaked dried ones overnight. I also added vanilla and it just was not good. I don't know about all those raving reviews but everybody has different taste I guess.

Seven Layer Taco Dip

Yummy, yummy, yummy! I too did not use lettuce as I knew there would be leftovers...only 6 of us eating. I don't think green peppers fit here so didn't use them either. I used freshly made salsa's (one roasted and one a pico type) and refried black beans w/jalapenos. Incredible! Oh, made beef tacos the next night. Put this dip on the corn tortilla (heated for 20seconds) then the beef and topped w/salsa....AWESOMENESS:-) Oops, forgot..gotta add guac, this is a must to give the dip a little more umph!!

Grandma Johnson's Scones

Wow! Addicting, amazing, incredible!!! I have never made scones before and I will never make any other recipe because this is perfect! I just made them and am bringing them to work with me. My husband and I loved this and made it just as the recipe stated (I hardly ever do that!) Oops, no that isn't true...I did add a couple sprinkles of balsamic vinegar. SO easy.

Spinach Quiche

Oh my!! Yummy is what my husband and I say! I gave it 5 stars based on how I prepared it. 1. No butter I always saute in EVOO. 2. Used fresh spinach and shrooms (canned?? that just aint right)!!! 3. Regular feta (cause that is what I had on hand). 4. After baking the shell for 7 minutes I lined the dish w/tom's. 5. Added 1 link of cooked Bratwurst (chopped up) to the spinach mixture. We could have eaten the whole stinkin quiche.

Charley's Slow Cooker Mexican Style Meat

Wow absolutely incredible! Yes it is spicy but Mexican food is suppose to be spicy but its not too hot. To be honest, this is better than what we get at Taco Shops here is So. Cal. I read a lot of the reviews & here is my version: Had a Beef Loin TriTip so I used that. 2. Seasoned the flour w/Paula Deens house seasoning and browned the beef. 3. 6 Green chiles, 4 garlic, (1cup of H2O w/4T Bisto), Tapatio (for hot sauce), and added 1tsp onion powder, 1tsp cumin and 1 cup fire roasted tomatoes (at Trader Joes or Henry's) plus the spices Charley recommended. 4. Blended all of that in the food processor and poured over the meat. 5. Cooked on H6 hours and on L2 hours. 6. Shredded the meat and cooked on Low for 1 more hour. Heavenly! I won't change a thing next time I make it! PS: Put Cotija cheese (Food 4 Less) on top of your taco! YUMMY
