Tex-Mex Pinwheels

they went really fast! I added an extra can of green chilis! Needed table salt. It only took about 10 minutes to prepare. I am going to make them again for cinco de mayo

Catfish Cakes

GREAT idea for catfish- I needed to find a recipe for catfish nuggets I had in freezer- this was perfect! Some of the reviews claimed it did not have enough flavor so I doubled the seasoning- added a tad more mayo and when I boiled the fish I used a bay leaf more cajun seasonings and garlic salt. I did not mash up the fish- I just mixed it in with other intredients- was wonderful! I paired it with creole rice recipe from here that was perfect! made no alterations to recipe

Cream Corn Like No Other

FANTASTIC! Excellent dish- needed a side last year for Thanksgiving, let my 16yr old sister cook this and was the best dish, now it's a must at all of our southern meals!

Award Winning Soft Chocolate Chip Cookies

Made these for my family reunion. They were the first dessert to be finished. They stayed moist over night. I used one big box of pudding instead of 2 small boxes. Wasn't sure which brown sugar to use, so I used dark (it's what I had)Could use a few more nuts, and will definately make again but try a different pudding flavor to make them more unique.

Buttermilk Oatmeal Muffins

ADD VANILLA!!! This recipe lacks spices- I made one batch exactally like recipe- they were moist and good, but missing something. Second batch I added vanilla, nutmeg, cinnamon, allspice, about 1/2 tsp each and 2 tsp white sugar- much better! Still think they need nuts or raisins.

Drop Biscuits and Gravy

The gravy was great- I used 3 tbs of butter instead of 1 in gravy, and browned it before I added milk, biscuits were pretty good, next time I would prefer canned if I have them.

Sausage Stuffing

Fantastic! Easy and delicious. We halved the recipe; big mistake because we want more! Did not use to stuff turkey. Cooked in a 2qt casserole dish at 350 for 40 min.

Buttermilk Pie IV

I hate buttermilk pies, but it's my boyfriend's favorite because his mom used to make it for him. This is the only recipe I have found that I love! Had to make changes though: there is too much filling for a deep dish, so I either do one deep dish and a small personal pie, or two regular pie shells. if you do 2 regular pies at same time- I put on a cookie sheet, cook at 375 for 15 min and 350 for 30. They turn out perfect!

Rotisserie Chicken

Excellent! I added chicken seasoning to the inside of the chicken. We have a small counter-top rotisserie. I have tried a few recipes, come up with a few of my own, but this was so simple, easy and delicious! My boyfriend and I agreed it was the best so far!

I took the suggestion of others to add italian seasoning, I also put fresh basil leaves on top. I would recommend mixing ingredents together in bowl with meat before cooking.

Honey-Brined Fried Chicken Breasts

I am going to have to try this again. I used chicken quarters instead of breasts, and left the skin on. The skin started to burn so I had to bake it to finish cooking. Next time I will see if the skinless bonelss chicken cooks like it should. And I will brine the chicken over night. Otherwise... EXCELLENT.

Delicious Ham and Potato Soup

I messed up nearly everything on this recipe, too much of this, too much of that and it turned out FANTASTIC!!! I did not have boullion so I used a creamy chicken seasoning pouch from ramen and I added about 2 tbs of bacon grease for extra flavor.

WWII Oatmeal Molasses Cookies

Excellent- I halved the recipe, added 1 tsp allspice and used butterflavored shortening. On a few I made them into oatmeal cookie sandwiches with a thin layer of vanilla frosting.

Apple Brownies

Excellent- I used old apples, not fresh ones. I believe this helped keep it from being too moist. I also diced them instead of slices. And added 1/2 tsp allspice. It did take almost an hour, and they are more bread-like than brownies- but great!

Creamy Au Gratin Potatoes

Tips: saute onions and add minced garlic to onions. After adding cheese- add tablespoon of bacon grease and tablespoon real bacon bits. With these changes it comes out wonderful! I also baked in mini 1 1/2 cup pyrex dishes- cooked for 35 min at 400 with lids on! came out perfect!

Brownie cookies

I DID NOT LET CHILL OVERNIGHT. I stuck in freezer for about 30 minutes. I added mini choc chips. So yummy! Only made 1/2 batch, more than enough. I recommend making 1/2 of them without the confectioner's sugar.
