Balsamic Roasted Pork Loin

Tasty and easy. I used a fig balsamic vinegar I had on hand and added more garlic powder and a few onion flakes. I actually have a recipe that I like a bit better from another site, but it's more complicated, so for a quick and easy meal - this is excellent.

Sophie's Zucchini Bread

This was very good. I did however adjust it a bit. I used organic whole wheat spelt flour, 1 cup sucanat, 1/2 cup brown sugar and 4 cups grated zucchini, and just eye-balled the walnuts - way more than a cup. I cut the oil to 3/4 cup. It turned out good, although I had to bake a little longer. I think this is probably a versatile recipe that will accept plenty of adjustments.

Brown Sugar Banana Nut Bread I

This was nice, but not great in my opinion. I only had 3 very ripe bananas. I added a dash more vanilla and a dash more salt. Also, used pecans instead of walnuts. This was lacking in flavor, but it may be that I am missing the flavor of the walnuts, and maybe the additional banana would have made the difference - still good though. Will try again with the walnuts and the additional banana.

This was good. However, I expected more lemon dill flavor, which didn't stand out for me. I used olive oil in place of canola oil and added more dill weed. Still needed more flavor for my taste, but still very edible.

Turkey Tetrazzini

I followed this recipe very loosely using brown rice noodles, dried mushrooms that I rehydrated, all the same spices - to taste, fresh milk and some canned milk, some chicken broth, lots of chopped onions, the cheese and it turned out great. Will make again when I have loads of turkey leftovers.

Leek and Fennel Soup

This was an enjoyable soup. I did not use vegetable bouillon - instead used half homemade chicken stock, and red potatoes rather than large baking potatoes. Will make again for a quick winter supper.

Grison Beef Stew

This was surprisingly good. Served it to two people who said "cabbage is not my thing" and both said they would enjoy it again. Nice flavor, I served it with garlic/rosemary bread - warm, and a tossed salad.

Caesar Salad Supreme

Delicious! Will make again. I make a traditional Caesar salad dressing (olive oil only)and this is equally delicious and very easy. I kept all the garlic and would not hesitate to add more. We love garlic. I used anchovy paste (quick & easy). Made for company and everyone commented on the excellent flavor.

Chicken Florentine Casserole

This had a pretty good flavor, although I used herbs de provence instead of Italitan seasoning. Browned chicken in a little olive oil rather than baking first. Only used about 2 teaspoons. Used fresh baby spinach. Next time I will double the sauce. Served over brown Basmati rice. All in all not to bad. Will make again.

Bourbon Pecan Chicken

This is very tasty, I pounded the chicken breasts to an even thickness, then browned them on each side and finished in the oven. I did not use clarified butter, but this seems necessary as the unclarified does start to burn very quickly. The sauce is a nice compliment - very intense, just to be drizzled on - not like a gravy. Will make again.

Red Broccoli Salad

This was delicious when fresh. Very flavorful. Good as leftovers the second day, however bacon tends to get a little soggy. Second time I made used roasted pine nuts, and sprinkled the bacon and nuts on each serving so bacon was not soggy as a leftover. The pine nuts were an excellent substitute for the almonds.
