Balsamic Roasted Pork Loin
Tasty and easy. I used a fig balsamic vinegar I had on hand and added more garlic powder and a few onion flakes. I actually have a recipe that I like a bit better from another site, but it's more complicated, so for a quick and easy meal - this is excellent.

Sophie's Zucchini Bread
This was very good. I did however adjust it a bit. I used organic whole wheat spelt flour, 1 cup sucanat, 1/2 cup brown sugar and 4 cups grated zucchini, and just eye-balled the walnuts - way more than a cup. I cut the oil to 3/4 cup. It turned out good, although I had to bake a little longer. I think this is probably a versatile recipe that will accept plenty of adjustments.

Brown Sugar Banana Nut Bread I
This was nice, but not great in my opinion. I only had 3 very ripe bananas. I added a dash more vanilla and a dash more salt. Also, used pecans instead of walnuts. This was lacking in flavor, but it may be that I am missing the flavor of the walnuts, and maybe the additional banana would have made the difference - still good though. Will try again with the walnuts and the additional banana.
