Real Strawberry Cupcakes

Reviewed: Feb. 15, 2014
I made these tonight and had to log in to allrecipes to rate them! I read others' reviews and made a few changes - used a full cup of strawberry puree and did not strain, did not use the pudding mix or the food coloring. I also used cake flour and followed the substitution directions, adding 2 tablespoons cake flour for every cup. This made 16 light and fluffy cupcakes with very good strawberry flavor. I also used a full brick of cream cheese and I have plenty of frosting left over. I used my mixer until adding the flour and then I used a wooden spoon to stir the remaining ingredients. Do not over mix or your cupcakes will not be light and fluffy!! Great recipe and thanks for sharing!

Apple Muffins

Reviewed: Oct. 25, 2013
I took others' advice and changed a few things. I doubled the cinnamon to 2 teaspoons and the apples to 2 cups. I did not have apple juice but I did have applesauce so I used 6.4 oz of that plus 1/4 cup water. The muffins turned out great and my nanny family ate all of them in 2 days. Delicious and moist!! Yummy!

Best Brownies

Reviewed: Oct. 25, 2013
I made this recipe EXACTLY as written except I did not make the frosting and it tasted perfect. I also beat the eggs well before adding to the pan and I also mixed the dry ingredients in a bowl before adding to the pan. Do not overmix! I baked at 325 for 22 minutes because my oven runs a little hotter than it should. Very easy recipe. The brownies came out gooey in the middle and the famous brownie "edge" around the edges. This one is my only brownie recipe now!

Potatoes and Peppers

Reviewed: Jul. 11, 2013
I cooked a pound of polish sausage in the pan first, removed the sausage, then cooked the potatoes, peppers and onion in the drippings. Great dish and very easy!

Texas Sheet Cake V

Reviewed: Feb. 8, 2012
I followed this recipe exactly except I used 3 cups of powdered sugar for the frosting and I used a 9x13 pan. Very easy recipe and so good. The cake is moist and no changes needed for high altitude. My parents and grandma and I all loved it. Thank you!

Abbey's White Chocolate Latte

Reviewed: Feb. 6, 2012
I used 2% milk and cream, semi-sweet chocolate chips because that's what I had on hand. It was very yummy and my mom and I both loved it! Thanks!

Chocolate Cavity Maker Cake

Reviewed: Jan. 13, 2012
I substituted canola oil for vegetable oil and strong brewed coffee for the kahlua. I needed a last-minute cake for a birthday party so I tried this one since it's easy and quick. I made 2 cakes because we expected more than 12 people. Everyone loved it! My oven tends to get hotter than it's supposed to be so I baked it for about 45-50 minutes. Very moist and chocolaty. Thanks for the recipe.

Outrageous Chocolate Chip Cookies

Reviewed: Nov. 9, 2011
These cookies are excellent. I followed the recipe exactly, baking for 10 minutes. They are NOT bland at all as others have said. The peanut butter is not overwhelming but just right. I am at high altitude (4900 feet) and no changes are needed. I will be using this recipe over and over again!! Thanks Joan!

Butternut Squash Soup

Reviewed: Sep. 6, 2011
I didn't have any onion so I just left it out. I cut one butternut squash in half and drizzled it with olive oil, salt and pepper then laid each half cut side down on a cookie sheet and baked for 20 minutes at 375. I dissolved 3 cubes of chicken bouillon in 2 cups water then added the peeled and cut up squash, nutmeg (didn't have any marjoram), and cayenne pepper. I boiled this for a minute or two then scooped out the squash into the blender, using some of the liquid from the pan. I blended this with 3/4 of 1 package cream cheese. My mom and I loved it! Sweet, creamy and just a little spicy. I plan to freeze it to enjoy later. Thanks for the recipe!

Oven Roasted Red Potatoes

Reviewed: Jun. 19, 2011
So easy and delicious! My only changes were to add a sprinkling of salt and pepper and I covered the dish with aluminum foil. Lots of flavor and the onion mix did not burn at all.

BBQ Chicken Sandwiches

Reviewed: Apr. 14, 2011
Excellent and easy! I took the advice of other reviewers and used my slow cooker. I used 2.5 chicken breasts (about 1.5 lbs) and Worcestershire sauce instead of steak sauce since I had it on hand. When the chicken was done, I shredded it in the slow cooker with 2 forks.

Chicken Fettuccini Alfredo

Reviewed: Jan. 30, 2011
I doubled this recipe for a church luncheon for 10 people. The sauce took a long time because I added everything gradually so the cheeses, flour, milk and half and half would blend nicely. I didn't need to double the recipe but the leftovers were nice.

Tilapia with Creamy Sauce

Reviewed: Jan. 15, 2011
I added less lemon and more cream cheese after reading other reviews. I also used dried tarragon instead of dill because I didn't have any dill.

Butterball Soup

Reviewed: May 3, 2010
My great-grandma's family moved here from Russia after leaving Germany. This recipe is very similar to the delicious butterball soup she used to make. She used all spice and chicken stock, both of which add A LOT more flavor. She didn't have a written recipe, making it hard to duplicate. I made some for her last year and she approved. :)

Creamy Chicken With Pasta and Broccoli

Reviewed: May 3, 2010
I also read the reviews saying this was a rather bland dish so I added garlic while cooking the chicken and used "Better than Bouillion" chicken base instead of the water. I used 6 oz of cream cheese and sprinkled black pepper on top with the parmesan cheese. The house smelled wonderful although the overall taste was still lacking. I will try it again, maybe with a pinch of salt added.
