Playoff Meatballs
This is an excellent and easy recipe. I substituted real diced onion and gluten-free breadcrumbs (same amounts as listed) and browned the meatballs in butter since I was out of vegetable oil. I used my cookie dough scoop to form them. They held their shape very well. The BBQ sauce I used was Weber Grill Molasses. I took them to a party and everyone loved them. I didn't have any to take home!

Real Strawberry Cupcakes
I made these tonight and had to log in to allrecipes to rate them! I read others' reviews and made a few changes - used a full cup of strawberry puree and did not strain, did not use the pudding mix or the food coloring. I also used cake flour and followed the substitution directions, adding 2 tablespoons cake flour for every cup. This made 16 light and fluffy cupcakes with very good strawberry flavor. I also used a full brick of cream cheese and I have plenty of frosting left over. I used my mixer until adding the flour and then I used a wooden spoon to stir the remaining ingredients. Do not over mix or your cupcakes will not be light and fluffy!! Great recipe and thanks for sharing!

Apple Muffins
I took others' advice and changed a few things. I doubled the cinnamon to 2 teaspoons and the apples to 2 cups. I did not have apple juice but I did have applesauce so I used 6.4 oz of that plus 1/4 cup water. The muffins turned out great and my nanny family ate all of them in 2 days. Delicious and moist!! Yummy!
