Mexican Casserole

Muy bueno! I had already thawed some ground beef, so I used what was on hand. Of course, I diced a large white onion and fried it with the beef. I used taco sauce rather than the packet and I used much more salsa than was called for. Just a personal preference. I didn't measure, I just tasted as I went along. I used a 19 oz can of black beans and a 14 oz can of corn, mostly drained, and then just added water as I saw fit. I used KELLYRNH's suggestion and layered whole grain tortillas in half way. What an amazing texture and flavour. My family LOVED this recipe. I will be making it again and tweaking it as I go! Muchas Gracias!

Red Lentil Curry

I recently bought lentils for the first time, ever, and needed a great recipe for the family that would suit my 11 year old daughter as well. This was it! She was suffering from sore gums due to a loose molar, so we needed something soft. I really appreciated Rachael's instructions for begginer lentil cookers, (see comments below somewhere). I used a fresh spice mix my father had ground up for me that contained all of the dry ingredients listed besides chillis. I just added them to taste, as I am not much for measuring. It was fabulous, not too spicey for my daughter, and yet full of wonderful, savoury flavours. I will certainly make this one again!

Men Love This Steak

Holy Cow was this DELICIOUS! (No pun intended). I used rib eye steaks and the meal was just fabulous. Extremely high fat, yes, but so worth it if you do this only occasionally. I didn't have dijon on hand and used regular French's mustard; I guess I don't know if it tasted better or worse, I just know we were VERY satisfied and full for hours. I did grill small potatoes with this meal and it was definitley too much to eat. Yum. I will make this recipe again, next time I want to be showered with praise, (and have time for a loooong walk afterwards)!

Stuffed Green Peppers II

I used yellow and orange peppers rather than green peppers and did not use instant rice. Instead, I cooked basmati rice in chicken stock for that extra flavour. I used mild italian sausage for the meat, out of its casings. I found that the spaghetti sauce really took away from the flavour of the peppers. Also, this was much tastier as leftovers. I don't think I will make it again, but I did freeze the stuffing and will eat as a side by itself. The stuffing is great!
