Thai Peanut Chicken

I love this recipe. I made a few modifications - I tripled the sauce and used liquid aminos instead of soy sauce. I replaced white wine vinegar with rice vinegar. Then I added a 1/4 cup brown sugar, and an entire can of coconut milk, and a tbsp of caridander instead of ginger. It was fabUlicious!

Slow Cooker Salisbury Steak

My 10 year old son who deems himself a Salisbury steak expert asked me never make this recipe again. He rated it two stars for flavor and one star for "after effects." Even with reduced sodium soup the recipe remains too salty. In addition, the meat takes on an odd flavor, in my opinion.

Bodacious Broccoli Salad

This is a wonderful recipes. The flavors blend perfectly to compliment the taste of the brocolli. The only change I made was a substitution of dried cherries for raisins. A lovely dish to pass!

Buffalo Style Chicken Pizza

This recipe is excellent. Instead of using a chicken breast, try baking or frying up a small batch of chicken fingers. Once cooked through, cut them up and put them on the pizza, with all other ingredients and bake.

BBQ Chicken Pizza

This is an excellent recipe. I made one slight modification. Instead of using the recommended chicken breast, I purchased a whole rotisserie chicken from my local supermarket. After removing the skin, I chopped up the white meat and used that for the pizza. The result was terrific. Also, if you decide to use a rotisserie chicken, don't forget to throw the leftover meat and bones into a pot of water to make a delicious chicken stock for soup.

Christmas Eve Beef Stew

I'm not a big stew fan, but this recipe is fantastic! I used my slow cooker for this recipe. At the suggestion of others, I also doubled the amount of seasoning. During the last hour of cooking, I added a package of Knorr brand brown gravy mix. The result was terrific.

Ginger Glazed Mahi Mahi

This dish is wonderful. The flavors blend well without being over powering. I cooked my fish on the grill. I also recommend the recipe for "Halibut with Rice Wine." This one is also a winner.

Maria's Rice

The first time I prepared this dish I found the taste to be a little flat. So, the next time I made it I replaced the can of beef broth with a can of beef consome, and added a small can of mushrooms and a finely chopped onion. It turned out much better.. enjoy.

Italian Vegetable Soup

This soup is very good. If you want this soup to taste like the Italian soup served at the Olive Garden, try these changes - Supplement the water for two 12 oz. boxes of beef stock, and add three boullion cubes.

Mixture for Meatballs, Meatloaf or Burgers

My family loved these meatballs. I served them with a homemade spaghetti sauce. I used the leftovers to make meatball subs the next day. I'm not a big fan of romano cheese, so next time I'll make these meatballs with parmesan cheese instead. Otherwise this recipe is terrific! Thanks for sharing.
