Best Ever Corn Muffins
These were very delicious! I sprinkled a little bit of sugar on top as well because I think that's what a restaurant we went to did- other than that, I followed the recipe to a T. It was wonderful! They almost made my main meal look sub-par. I was totally happy just eating corn muffins and never eating the main dish, lol. I got 14 muffins out of the recipe. The only thing that made me give 4 stars instead of 5 was that I wished they would have been more moist.

Basil Chicken and Pasta
This was sooooo delicious! I doubled the liquid in it and substituted heavy cream with 1/2 cup milk and 1/2 cup Greek yogurt. It was a nice change from pasta with red sauce. In fact, I'm not sure if regular spaghetti will be eaten again in my house for quite a while. My fiance loved it and it smelled DELICIOUS while cooking! :)

Chicken Chimichangas with Sour Cream Sauce
These were absolutely scrumptious!!! I made them as written (mostly) and they were delicious! My 4-year old complained that they were a little too spicy for him (because of the green chiles), but my fiance and I both loved it. The only thing I changed was baked them instead of deep-frying. I brushed olive oil on top of each one and then baked them for about 10 min at 350 degrees F and then another 10 min at 450 degrees F (turning the pan around when necessary). They were super crunchy, yet not completely soaked in oil. Yay!
