Banana Banana Bread

I made this bread to give as a Christmas gift, it turned out very yummy. I doubled the recipe and made muffins first so I would know if I needed to add anything. I like to do this if I'm trying a new recipe and especially giving it away. The only change I made is I didn't have enough bananas so I added plain yogurt to make up for moisture; it was about 1/2 cup.

Coconut Bon Bons

My Mother and I made these for Christmas and they were so good. Tips: Put powdered sugar on your hands when rolling balls, this keeps them from being so sticky. After inserting toothpicks put balls in freezer for about 30 minutes before dipping, if balls begin to fall off put in freezer for a few more minutes. Remove toothpicks immediately after dipping before chocolate dries this keeps you from having holes. I use a combination of almond bark and fondue chocolate, the combination is amazing.

Cranberry Nut Bark

Yum, yum, yum!!! This was my first attempt at bark and it turned out great. I melted my chocolate in a bowl over boiling water; my microwave runs very hot. I didn't have enough almonds so I used almonds and walnuts. I also took the advice of other reviews and reserved a few cranberries and nuts to sprinkle on top. This is a keeper. I think I will try it again with dried blue berries.

Christmas Breakfast Sausage Casserole

I wasn't overly impressed with this casserole, my bread was very soggy despite using less milk and more eggs. The flavor was very good if you could get over the bread part. I think I will try it again and instead of bread I will use baking mix to put drop biscuits on top and reduce the milk even more. I think that would be much better, the biscuits will not be sitting in the egg mixture so they should be a nice compliment.

Bisquick® Pancakes

Microwave Peanut Brittle

I was torn on what rating to give this. My end result was a gooey mess, it tasted good but not brittle. I don't know if it was my microwave or what. After reading other reviews of microwaves burning the mixture I reduced the cooking time to 9 minutes and 3 minutes since my microwave is high wattage. I will not try this again.

Cherry Limeade I

As is I think this recipe would be way too tart, I used only one can of frozen limeade mix and 2 liter of sprite and it was still plenty tart. If I make again I will use 4 liters of sprite per can. Having worked at Sonic I know how they make their limeade and this similar but way off at the same time. I made this as a fun drink for my daughter's "Dora" themed birthday party, like a fake margarita. I got comments that it was good but very tart.

Mexican Bean Salad

I made this for my daughter's "Dora" themed birthday party. I got rave reviews and even a recipe request. I did make a few changes because I didn't have a couple of ingredients and don't like a couple. I left out the bell peppers, I don't like them. I used canned corn, all lime juice and half the amount of oil and vinegar. This is a very light way to fix beans for the summer.

Balsamic Vinegar and Ginger Bok Choy

I really enjoyed this recipe. The store did not have baby bok choy so I used regular. I also did not add the capers or lemon juice, I don't buy capers and I don't think it needed the lemon juice. Recipe needs salt and pepper to taste. I look forward to making again with baby bok choy and possibly trying the capers.

Fluffy Pancakes

These pancakes are very fluffy and soak up lots of syrup which I love. They are not hard to make but I think I will stick with my normal recipe using homemade baking mix just because it's so much easier when you have a toddler side kick, which I always do. I always add about 1/2 to 1 teaspoon of vanilla extract to my pancakes depending on size of batch. I think it adds a depth to the flavor.

Homemade Biscuit Mix

This is a great starter recipe for all kinds of yummy things. My two year old and I made blueberry pancakes using this recipe in place of Bisquck, they turned out fluffy and light. So much cheaper to make verses buying Bisquick and not hard at all.
