Blueberry Oatmeal Chia Seed Muffins
What a fantastic muffin! I just bought a bag of chia seed at Costco and went on the internet to find recipes to use in them. I just made these muffins and they are great!. I did increase the flour to 1 1/2 cups, lowered the sugar to 3/4 cup as I was using homemade applesauce with sugar added. I also soaked the chia seeds in the orange juice as recommended. Thank you for your recipe. I will be making these often.

Boilermaker Tailgate Chili
I made this last week to try it before I made it for a church chili supper. I didn't have any chili powder so made some of a recipe online. It had a nice bit to it and we enjoyed it very much. Because it made so much I put 3 quart sized bags of it in the freezer for last minute suppers in the future. Today I made it for the chili supper tomorrow and I had bought chili powder at a local specialty store and continued to add all the listed ingredients. This pot is quite a bit spicier than the first. Hope everyone there likes it. It's still good, just spicier. Maybe if I make it again I would cut down the amount of the spices. Hubby likes it and that's what matters. :)

Mid-Eastern Chicken Thighs
Made as directed...Yummy...except I think my curry is a bit on the "old" side, as I added extra but really didn't taste it...Hubby said I could make this again! Served with a side of basmati brown rice and zucchini.
