Michele's Ground Beef Casserole

This is a new family favorite! I prefer the cheese layer underneath the dough topping so it stays soft. And the sweeter dough varieties that Pillsbury has are even tastier on top!

Cornucopia Salad

This was delicious, aesthetically pleasing, easy and nutritious! The only change I made was feta instead of blue cheese, because it's a little more mellow for a crowd of unpredictable tastes. Great salad recipe!

Country Brunch Skillet

Great recipe platform! I used what I had in the veggie drawer, mushrooms, onions, garlic and cilantro. I also added some spoon fulls of salsa to the mixture and fresh ground black pepper. It turned out well, took about 15 mins to harden the eggs. Delicious!!!

Shrimp Scampi ala Norelllaura

This is an excellent recipe!! I have also been trying different scampi recipes in search of the perfect one... without going to a restaurant, and this is it! The length of cooking time in the beginning can be reduced, especially if you tend to burn garlic easily. The amount of flour is not really critical either. It depends on your shrimp and the leftover is discarded anyhow. I added a touch of honey too after reading the reviews, but don't know if it was even necessary. It was delicious!

Blueberry Buttermilk Coffeecake

This was my first coffee cake and it was simple to make and deeeeelicious!! I even made a few changes since blueberries weren't really in season. I added chocolate chips instead and added some cinnamon to the topping for some extra flavor. Moist, not too sweet, a definite keeper!

Asian Glazed Chicken Thighs

Deeelicious!! I added some cold water & cornstarch mixture to the warmed sauce to thicken it a little, some dried chili peppers and tripled the green onions. Served it with jasmine rice and steamed asparagus.

Chicken Enchiladas

This was very good! I did add a few more spices and some bell peppers and garlic to the filling. Probably quite a bit more cheese on top, and foil to cover while baking. Topped with a sprinkle of crushed black pepper, cumin, sliced avocado and some chopped Serrano peppers for those who wanted more heat. Delicious!

Grain and Nut Whole Wheat Pancakes

These are pretty good. I did cut the recipe to 4 servings and use a large egg, after reading the reviews. I added some cinnamon, nutmeg and ground flax seed since I didn't have any walnuts. My family enjoyed them and they were definitely more healthy than the standard buttermilk pancakes!!

Jalapeno Garlic Tilapia Pasta

I don't know what happened but I followed the recipe exactly and it ended up with very little sauce and very little spice or pizazz at all!! My husband and I were both disappointed. it needs some fresh herbs maybe basil or cilantro to kick it up. and the sauce can easily be doubled or maybe the pasta cut in half. I might try it again with a few major modifications!!
