Simple Hamburger Stroganoff

Made this for dinner this eve for the 2 of us. I had a bag of frozen meatballs I had purchased and thought it would work. It was great! I did read other reviews and cut the cream cheese to about 1/2, added some onion, and I only used one can of cream of mushroom soup. Everything else I did per the recipe. Very good and there are leftovers! Yay!

Camp Cornbread

This is really good. I have made it without the sugar also (not on purpose, just forgot it), and it is just as good. So I don't know if it truly needs 1/2 cup... regardless, it is good either way. I usually make it in a pan a bit smaller than 9x13 so it is a bit "higher" when it is cut. I have made this many times, just realized I had not rated it. Yumm!!

Tater Tot Bake

For some reason, all I could think about today was a Tater Tot casserole. Haven't made one in about 20 years!! Used this recipe plus the reviews as my base. As many others did, I used the entire bag of Tater Tots. Also, to the ground beef mixture, instead of milk, I subbed sour cream. Gave it a great taste! Also added a can of creamed corn and 1/2 of the Tater Tots and mixed all of that really well. Poured that in the casserole dish then put about a cup of cheese and then the rest of the TT's. Baked about 35 minutes, and then added the rest of the chees for the last 5-8 minutes or so. It was SO good. When my husb walked in he asked what smelled so good and then kind of yelled and chuckled when he saw it! We both said it had been way too many years since we had this great dish!!

Baked Scalloped Potatoes

When making these, I used red potatoes and did not peel. I used my mandolin and sliced them and an onion very thinly. I baked them at 400* for about 50 mins. Covered the first 30 mins and put some sharp cheddar cheese I needed to use up on for the last 10 mins. They were good!

Tina's Shortbread Chocolate Chip Cookies

So good! I used mini semi-sweet chips instead of the larger ones, and ground walnuts. They are excellent! These aren't like toll-house choc chip cookies... but I think the shortbread "element" makes them amazing. I have looked at this recipe for quite some time, and I am so glad I finally made them!

Viennese Crescent Holiday Cookies

These cookies almost melt in your mouth! The only thing different I did was to use ground almonds instead of hazelnuts because I had them on hand and then switched in almond extract instead of vanilla. They are excellent!

Raspberry and Almond Shortbread Thumbprints

Very good! Mine flattened more than the ones in the pics, but still tasted very good. I am glad I added the glaze, as they look prettier and add a great taste to the cookie! Quite good!!

Country Cabbage Soup

I have to say this was super good. That said, I had to make a few changes just because of what I had on hand as it was cold and rainy and I did not want to go to the store..... I halved the recipe. I used my food processor to chop up 2/3 of a very small head of cabbage and a few baby carrots. I used my mandolin to thinly slice a large onion and the 3 ribs of celery. Used just one can of stewed tomatoes and a carton of beef stock and a small can of V-8 juice. It was amazing soup on a yukky day. Oh, and I diced up a couple of Yukon Gold potatoes and threw those in, too. Leftovers for the week..... YAY!!

Potato Casserole II

This was good and easy, too! I didn't have the cr of chicken soup so used cr of mushroom. And instead of chips, I used my small processor and whirred up some Ritz crackers for the topping. Really good side dish!!

English Pub Cheese Spread

Made this for company this eve. It was good. I did not have cayenne pepper so used some pepper flakes instead. Otherwise stuck to the recipe as is. It was really good on crackers and everyone really liked it. Thanks for sharing the recipe!!

Cheri's Apple Pie

Used this customized version of Ople's Apple Pie. It was EXCELLENT! Had company for dinner, and I don't usually try a new dessert for company, but the original certainly has many followers and the customization here sounded good for what I wanted. Everyone absolutely loved it. So glad I took the chance and made it! Will do so again for sure!!

Roasted Pork Tenderloin

Was looking for something for my pork roast using sauerkraut. The apple added a good taste as did the onion. Only thing I didn't add was the brown sugar. We love sauerkraut, so didn't want a sugary taste to it. Had it in the oven for about 2 hours. This was very good, AND there are leftovers!

Tuna Noodle Casserole II

Day before grocery shopping.... plus I forgot to take something out of the freezer... so tuna casserole came to mind. Instead of the same one I always make, I entered tuna and noodles into the recipe finder. This was good. I had some Half & Half to use up so used that in place of the Evap milk. For the chips on top I used Sweet Onion Maui Kettle chips. They added an interesting taste!!

Turkey 'n Stuffing Bake

Made a turkey breast on Labor Day. Had leftovers. Made stovetop, but first I sauteed some onions and a diced apple in butter. Added a tsp of sugar and some cinnamon. When they were soft, I let them cool and then added them to the stovetop after the 5 min. wait. Used that to make my stuffing "nest" in an 8x8 pan. Followed the rest of the recipe, but did not add peas. Put the onions on the top when there was about 8 minutes left. Good use for leftovers!

Apple Dip

This is such a good recipe. It really tastes just like a caramel apple. You can also add some of those Fisher's ice cream nuts from the can, and then it REALLY tastes like a caramel apple! I have also added toffee bits. Be sure to soften the cream cheese before you start for the best consistency. Such good stuff!!! Have a bunch of apples ready!!

Panzanella Salad

Amazing! Have never had nor made a panzanella salad. As I toasted up some leftover French bread, I went out into the garden and picked grape tomatoes, and some basil. Also used a red onion from the garden. Used capers instead of olives. It was just the right amount of balsamic vinegar w/ the olive oil. We both loved it. With the amount of tomatoes we have right now.... I could make this for 3 meals a day for a month!! In January I will have a memory of all the freshness in this salad.

Sophie's Zucchini Bread

I chose this recipe because it uses 3 cups of shredded zucchini instead of 2 which most other recipes use. I had 4 very large zukes to use, so got the food processor out and shredded all of them. I made this recipe, but made 1 bread and 6 large muffins. Cooked the muffins for 30 mins and the bread for about 54 mins. Then I put the rest of the shredded zukes into ziploc bags with 3 cups shredded into each bag. Will use this fall and winter to make more of this excellent recipe. I did not use nuts, and I think next time when I make muffins I will add some choc chips in.

Original Homemade Italian Beef

Being from the Chicago-land area, I had high hopes. They were dashed a bit, but I think the recipe is GOOD, but I read the reviews and used some beer instead of water. Also, I was not happy w/ the French bread I used. Those 2 things were certainly not the fault of the recipe. If I could get a Gonnella bread here, I think that would work well. But, it was pretty good!!!! Leftovers tonight were just as good!

Brooke's Best Bombshell Brownies

Made these today. 97* outside, but I just had the urge to bake something. They are wonderful!! The only thing I did diff is used milk choc chips because that is all I had (and I surely did not want to go to the store!!). I normally don't like the harder pieces on the "ends", but for these, they are amazing. Not sure why that is, but these really ARE the bomb!!

New Wife Tuna Salad

I'm surely not a new wife, but after 39 years of marriage, my husband said this was the best tuna I ever made! It was very good! Only thing I did diff was I had no honey mustard so used some stone ground and added a squirt of honey. Good stuff!!
