Peanut Butter and Cream Brownies

Reviewed: Oct. 6, 2010
My niece and I refer to this dessert "Paw-Paw Pie." She is only 3 and was very delighted that she got to help make this for her grandfather. I added additional sugar and peanut butter to the middle layer. Also, I recommend that you use a large tub of whipped topping otherwise there will be very little left for the topping.

Mrs. Sigg's Snickerdoodles

Reviewed: Oct. 6, 2010
These were wonderful. I baked for 8 minutes and allowed the cookies to cool on the cookie sheet for 2 minute before moving to the cooling rack. I used butter and butter crisco. Also the amount of white sugar to roll the cookies in should be doubled. As written, you'll run out before you're done. I took them to work and several people asked for the recipe and my family loved them.

Special Buttercream Frosting

Reviewed: Jul. 5, 2010
this frosting was delicious! however, I did use half butter in the recipe instead of all shortening. I halved the recipe, which would be a wise choice unless you're making a wedding cake or cupcakes for a small army. downside is that the dessert has to be refrigerated because of the butter and cream.

Honey Bun Cake

Reviewed: Jun. 23, 2010
Moist and delicious, even with the boxed cake mix. The cake is very light and is far better than most other honey bun cakes that I've tasted. This recipe is a keeper and I will make it over and over again.

Downeast Maine Pumpkin Bread

Reviewed: Jun. 23, 2010
This is the best recipe for pumpkin bread by far! It's moist and delicious and freezes wonderfully. I added golden raisins and chopped walnuts and baked in individual bundt pans.

Sweet Potato Pecan Waffles

Reviewed: May 22, 2010
This was a good basic recipe, however it did require some tweaking. I used 1 1/2 c of sweet potatoes and doubled almost everything else. I substituted whole wheat flour, olive oil instead of butter, 1/2 tsp pumpkin pie spice, 1/4 tsp nutmeg, 2 tbsp baking powder, 1/4 c brown sugar, and 1 tbsp of vanilla flavoring. I didn't add the pecans to the batter. I toasted them and added to warm syrup. I do think that separating the eggs makes enough of a difference in taste and texture to go through the trouble. I made them to have with fried chicken and everyone raved about how delicious they were. The waffled won't get extremely crisp in the waffle iron, but if you toss them in the oven for a couple of minutes they will crisp up just fine.

Real Sopapillas

These were really tasty! I made them for taco night with friends, and served with vanilla ice cream, honey, cinnamon, and whipped cream. They were a hit.

Banana Banana Bread

Reviewed: May 2, 2010
This is the best banana bread ever. It's "unfooled" around with and delicious as is. It also serves as a great base to add blueberries, chocolate chips, or pineapples.

Tiramisu Layer Cake

Reviewed: May 2, 2010
This recipe as written is good. After making the recipe once I felt that the Kahlua should be doubled everywhere as the others have stated. Using cream cheese, albeit delicious, is a disservice to this dessert. The cake is slightly expensive and time consuming to prepare, but it's well worth the effort. I've also made it as a dessert in individual serving bowls with an almond pound cake as the base and used toasted sliced almonds as garnish. I've gotten rave reviews each time and I'm asked to bring this dessert to every event. Chocolate curls make for a beautiful finish and are worth the effort. I used dark chocolate chips and just melted them over a double boiler and poured into a small rectangular plastic container to harden into a block. Please note: If you do not like coffee, you WILL NOT like this cake. Please spare yourself the disappointment and others the loads of poor reviews because you don't like coffee.
