Chocolate Pudding Cake IV

I didn't like the taste at all. It wasn't sweet enough and I could taste too much of the sour cream in it. The batter tasted better than the cake.

Cheese Lovers' Lasagna

Really good recipe! But I didn't have the heart to use cottage cheese or American cheese in lasagna, so I left out the American and used ricotta in place of the cottage cheese. Very simple but nice!

Cheeseburger Pasta

If you want a cheap, quick, and easy meal, this is it. I made the version on the back of of a soup can that called for beef broth and ketchup. The sauce was a little thin, but nothing a little flour can't fix!

Cherry Salad

Very simple and yummy! You can put it together in a snap. The only thing is that I'd halve the condensed milk next time, because it was almost too sweet.

Chicken Scampi II

This is a great recipe, and very simple to make. In my opinion it is better than the stuff in the resturaunts. Less salt. Even my fiancé loved it, who claimed he didn't like scampi. I did add a splash of white wine and a little garlic powder and it turned out perfectly. Just make sure you add the lemon juice slowly, or you'll risk scalding it, giving the sauce a very brown and almost burnt sour taste to it.

Gnocchi with Sage-Butter Sauce

I was very disappointed. I love gnocchi, and unfortunately this didn't make the cut. I thought the sage and garlic were way too strong together, and it was too greasy for me. If I were to make this again, I'd probably cut down on some of the garlic or sage, but I don't think I'll attempt again.

Mexican Casserole

Overall it's a great recipe. I, too, used taco seasoning instead of the chili powder, but I think I'll add both next time because I thought it could use more of a bite. I also substituted a can of corn for the beans, since I hate beans. It turned out fine.

Chocolate Eclair Dessert

So easy to make! Instead of canned frosting I made a chocolate ganache that I found on here. I think canned frosting would've made it too sugary. I also used cinnamon graham crackers instead of regular, since it was all I had. I gotta admit that I was worried about just mixing instant pudding mix with whipped cream, but I was pleasantly surprised. I do recommend letting the completed dessert sit for a little bit until the crackers get softer, as another reviewer mentioned. I also recommend picking a good chocolate topping for this, because I noticed that it really can make or break the recipe. But overall, it's a good recipe!

Wagon Wheel Chili

I gotta admit that at first I thought this would be boring, but I was wrong! It was very good! I substituted cayenne pepper for the chili powder because it was all I had. Turned out fantastic! I will be making it again! Next time I might add some chopped tomatoes or green chilies.

Chocolate Truffle Pie

This is a VERY rich dessert, so break out the glasses of milk. I followed the advice of a previous reviewer and the pie did turn our more truffle like than brownie like. You don't need the full 35 minutes. Mine was done in 25. This is a more bitter dessert, so next time I'll either add a mix of milk chocolate and semi sweet or add a raspberry topping or both.

Stuffed Blueberry Toast

I was so disappointed with how this turned out. First of all, the mixture needs at least twice the amount of brown sugar and less cream cheese. Not only was the filling not sweet enough, even with the blueberries, but it was way too much. It didn't seem like it was going to be that much when I was spreading it on, but once it cooked there I realized how much it really was. Also, the dipping mixture made the bread WAY too soggy, so it took forever to cook and it dried out the bread too much. There was no nice eggy coating like there is on traditional French toast. It just turned out to be one big sloppy mess and made flipping the sandwiches a pain. I think next time I'd omit the milk completely, IF I ever try this recipe again.

Italian Bow Tie Supper

Pretty good recipe. Easily customizable. I do regret, however, the spinach. I had a perfect tomato sauce going on, but the spinach ruined it. :( I might add something with a less leafy taste, or nothing at all. I also added one additional can of sauce and a can of diced tomatoes. Glad I did, because It needed it. Another bit of advice: the longer you cook it, the better. If you don't cook it very long, the spices won't have a chance to really soak into the sauce, and it will taste bland.

Chicken with Lemon Sauce

Amazing! The chicken had a nice brown crust that had almost a nutty flavor to it. Make sure you keep the left over crust mixture on hand in case you have a problem with it flaking off like I did. The pan sauce was excellent!

Rosemary Rice

Good, flavorful rice dish without all the fat of butter! I didn't really measure out the rosemary. I just grabbed about maybe a half tablespoon of sprigs from my rosemary plant, tore up the leaves, and threw them in. Rosemary is a very fragrant herb, so it's easy to add too much. I thought half the amount was a nice start. Good recipe!

Big Ed's Cajun Shrimp Soup

I was a little skeptical about a soup with V8 and clam juice, but it turned out great! I added more spices and hot sauce to cover up some of the fishy taste the shrimp added. Also threw in half a bag of frozen okra to make an even hartier soup. I was full after two bowls! Served it up with pieces of a fresh loaf of crusty Italian bread. BTW, it took me forever to find the clam juice. I found it with the canned tuna and sardines.

Lemon Cooler Cream Cake

VERY lemony. Almost too lemony for me. It still turned out OK though, and it's a nice treat in the 100+ degree weather we had. Sprinkled some sweetened coconut flakes on top which added a nice touch. If I were to make it again, I'd use plain white cake.

Very good! They sorta taste like chocolate covered granola bars. My only complaint is that the bars are hard to cut into. Maybe melting the sugar with the butter would help that.
