Old Fashioned Pineapple Upside-Down Cake
AWESOME! After taking some advice from other posts and included some changes on my end, this was wonderful. Here are my changes: +1/3 cup plain yogurt, +1/4 cup pineapple juice, and for the final touches and because I live in NM and it is Hatch Chili season, I added 1 cup hot green chili (finely diced). The chili was the last thing in the skillet before the batter. Don't freek out, the hot and sweet go great together. Once the neighbors found out I was making this, they lined up at my door. It is a big hit around here. Next up for me, green chili ice scream. Thanks for a great recipe.

Ambrosia Cookies
I thought this recipe was absolutely wonderful. This is an easy 5 star! I made a few minor adjustments because of personal preferences and where I live (Bernalillo NM 6300+ altitude). Cooking time 11 minutes exactly, 1/2 cup butter, 1/4 margarine, 3/4 cup brown sugar and 3/4 cup white sugar and 1 3/4 coconut. Could not ask for a better cookie :) Thank you. I make a different batch of cookies every one to two weeks for my wife and neighbors. Mega thumbs up from everyone!

Easy Sugar Cookies
A very easy and delicious recipe. As they were coming out of the oven, my wife was eating them! I did add more vanilla as was suggested by a few reviewers. They came out crispy AND chewy. They were WONDERFUL. I live in a high altitude area and other than adding more vanilla, I did not change a thing. The cookies took exactly 10 minutes to bake.
