Caramel Shortbread Squares

Kristin's Nov 18, 2008 notes were helpful (double recipe; parchment paper; bring to a boil on low heat, stirring constantly; cool cookie and don't add caramel while very hot; use warm/hot knife to cut). That said; shortbread is very crumbly. Next time I'll try the crust I use for lemon bars which has a different proportion butter/flour and uses powdered sugar. Its more of a buttery/rich recipe than sweet.

Blueberry Oat Muffins

Good base recipe. After looking at other suggestions, I replaced the oil with applesauce, used whole wheat flour, added 1/2 cup Stevia in the Raw. Substituted 3/4 tsp baking powder, added in 1 tsp cinnamon, 1 tsp nutmeg and a sprinkle of cloves into the batter. Also added 1/3-1/2 cup of cranberries in addition to the blueberries. Very moist and satisfying. Works out to 3 points per muffin on WW point system.

Oat Applesauce Muffins

Nice moisture. Others like the muffin, but I found it a little bland, even after doubling cinnamon and using two different varieties. Good enough that I'll play around with adding more spice.

Morning Glory Muffins

Very good. I made without nuts and coconut due to allergies, and increased raisins slightly. Didn't seem to hurt the consistency. Kept fine. Recipe actually made 24 muffins for me.

Baked Ziti III

Great stuff! I made a 1/2 recipe in a shallow 9x13 " pan and it was full. I prefer to eat vegetarian, so I substituted Morningstar Sausage for the ground beef. Probably ended up using more prov/mozz as well--6 oz in a half recipe. Delicious, easier than lasagna and makes great left overs.
