About this Cook
I am a wife and mother of three children. One still at home. I cook because I have to, BUT I have recently become more interested and enthused since my daughter told me about I have two extra people living in our home due to the economy so I have to cook more often now and needed to do better.
My favorite things to cook
I love to make things that will please the crowd, such as lasagna, pasta salad, mexican etc. I also enjoy baking as it makes all the men happy!
My favorite family cooking traditions
Probably Red beans and Rice which came from a relatives restaurant. It's always a hit.
My cooking triumphs
The oyster stew I just made from I DONT cook seafood but everyone raved. Quite an accomplishment in a coastal town where everyone knows how it should taste.
My cooking tragedies
A recent stir fry that normally turns out pretty well. When they don't say much at the table, you know you've crashed and burned. LOL

Dream Cream Cheese Pie
My family couldn't believe how great this pie is. The bananas MADE this pie. I didn't have to refrigerate it long to serve it as it is ready within 30 minutes as far as firmness. Make sure you make two of these as it will be gone before you know it!

Better Than Best Fried Chicken
I was very disappointed with this recipe. I refrigerated the chicken soup mixture with boneless chicken pieces an hour or two before frying. Not sure if this was the problem, but the batter did not stick when I fried it. I tried dredging the chicken a second time in the flour mixture but it didnt help. I am not sure if it was a problem that the chicken was skinless. My son in law has lots of experience cooking and suggested I dredge the chicken in flour before I dip it in the soup mixture. Not sure I will try this again. I think I'm hipper with over frying.
