Jicama and Pineapple Salad in a Cilantro Vinaigrette

This was AWESOME!!!! I used 1 pepper cuz I'm a wimp & about 1/3 of a "bunch" of cilantro cuz I'm impatient. Other than that I stayed true to the recipe. I will definitely make it again. Woops! I forgot to add avacado at the end...

Crispy Rosemary Chicken and Fries

Maybe it was due to varying oven temps but mine didn't come out crispy at all. Everything was still tasty & thoroughly cooked but there was WAY too much oil. Next time, I'm going to try halving the oil & cooking it at 400. But it is good enough to try again!

Panzanella Salad

Everybody loved it. My kid even said it was "awesome" but then he only ate the bread & left the veggies. Oh well... I had to use ciabata bread because I couldn't keep a french loaf in the house for 24 hrs (so it would be hard) w/out it getting eaten!

Super-Easy Stir-Fry - Allrecipes

Excellent. The directions were perfect. I LOVE stir fry dishes. Now I can tackle them w/confidence. Of course I had to write it all down on a notecard in an easy to read format... but it was worth it. Step number one should actually be "start boiling water for our rice or noodles" because that can be cooking while you do everything else.

Hasty Chocolate Pudding

Super fast, easy & rich (I might add less chocolate next time). No more store bought pudding for us! I used fat free milk and it still came out thick. I think I'll try adding some fat free butter next time.

Sausage Casserole II

Very easy. I used turkey sausage because that's what I happened to have in the fridge. The recipe still needs something though. I might replace the onion with some lipton onion soup mix next time and leave out the juice from the canned corn. (my casserole came out soupy)

Strawberry Spinach Salad I

Yummy. I didn't add all the dressing though. I drizzled a little on each salad. My son still thought it was too sweet... Also I didn't have any sesame seeds, so I added sunflower seeds.

Grilled Brown Sugar Pork Chops

Very yummy. The whole family loved it. I don't have a grill so I baked them in the oven as suggested by some of the comments. It took my chops over 30 minutes at 400 degrees to lose the pink in the middle though.

Beets in Orange Sauce
