Addictive Sweet Potato Burritos

I love these burritos and my meat-loving boyfriend liked them too (a very rare occurrence for a vegetarian meal)! I will say that I think the prep time should be a bit longer because I made the sweet potatoes beforehand and that took about an hour in the oven. You might think it's weird that you're adding mustard & soy sauce to the beans but it totally works. I made my own salsa (very spicy) to go along with these and it pairs really well. This is definitely going in my normal meal rotation...

Zippy Chicken Coleslaw

I really enjoyed this recipe. I made a few changes, mainly, adding about three times more chicken than the recipe calls for. I shredded about 1.5 lbs for this salad to make it more hearty. The reason I only gave this recipe four stars is because 1) it doesn't tell you which flavor of ramen noodles to put in. I ended up using the chicken flavor but wonder if the oriental flavor would have been preferable and 2) the dressing was way too sweet and there wasn't much of it. I would halve the sugar, and double all of the other dressing ingredients except the flavor packet.

Kung Pao Chicken

This was a really good recipe! My bf was craving some Chinese takeout but we're trying to save some money. I pulled this recipe up and had just about everything I needed to make it (minus the chile paste and water chestnuts). The prep was very easy and it didn't take long to cook. The only thing I did differently was add sliced carrots to the chicken while it marinated and cooked them with the chicken as well. I served this over brown rice. Thanks for a great recipe!

Orange Soya Sauce Marinated Chicken

This was a really delicious marinade. I made a few changes by adding some ground ginger (1/2 tsp) as well as a couple tablespoons of vegetable oil. I marinated the chicken overnight and then broiled it for 20 minutes, flipping it at 10 minutes and brushing some of the marinade on it. I dumped the remaining marinade into a pot and boiled it for a little while until it reduced and then spooned a little over the chicken. I served the chicken with brown rice and garnished with some chopped green onions. Very good! I'll definitely be adding this to the rotation.

Braised Balsamic Chicken

This was a great weeknight recipe! I made a few changes by cutting the chicken into (just larger than) bite-sized chunks. About halfway through browning the chicken I added a clove and a half of diced garlic and when adding the tomatoes and balsamic vinegar I also threw in a can of (drained and rinsed) quartered artichoke hearts - thanks to the suggestion of another reviewer. While the chicken was simmering in the vinegar and tomatoes I broiled some asparagus, cut into 1-inch pieces, with olive oil, salt & pepper, and threw them into the chicken just before I took it off the stove. I served this over brown rice. It received rave reviews from my boyfriend (who has a self-proclaimed discerning palette). 5 stars! This will definitely go into the rotation!

Wazzu Tailgate Chili

This was an AWESOME chili recipe. I had to make a few adjustment due to lack of ingredients and personal taste. I omitted the green bell pepper (just not in to them). I also omitted the habanero pepper because I couldn't find any at the local grocery store and insteadused 3 jalapeno peppers. For the beans I used one can of chili beans in hot sauce and two cans of chili beans in medium sauce. I topped the chili with cheddar cheese, chopped red onions, and avocado. My boyfriend must have told me he loved this chili more than 20 times this weekend. It was spicy enough to tingle the taste buds and leave a little burn, but not melt your taste buds hot. Perfect. Thank you!
