Addictive Sweet Potato Burritos
I love these burritos and my meat-loving boyfriend liked them too (a very rare occurrence for a vegetarian meal)! I will say that I think the prep time should be a bit longer because I made the sweet potatoes beforehand and that took about an hour in the oven. You might think it's weird that you're adding mustard & soy sauce to the beans but it totally works. I made my own salsa (very spicy) to go along with these and it pairs really well. This is definitely going in my normal meal rotation...

Kung Pao Chicken
This was a really good recipe! My bf was craving some Chinese takeout but we're trying to save some money. I pulled this recipe up and had just about everything I needed to make it (minus the chile paste and water chestnuts). The prep was very easy and it didn't take long to cook. The only thing I did differently was add sliced carrots to the chicken while it marinated and cooked them with the chicken as well. I served this over brown rice. Thanks for a great recipe!

Orange Soya Sauce Marinated Chicken
This was a really delicious marinade. I made a few changes by adding some ground ginger (1/2 tsp) as well as a couple tablespoons of vegetable oil. I marinated the chicken overnight and then broiled it for 20 minutes, flipping it at 10 minutes and brushing some of the marinade on it. I dumped the remaining marinade into a pot and boiled it for a little while until it reduced and then spooned a little over the chicken. I served the chicken with brown rice and garnished with some chopped green onions. Very good! I'll definitely be adding this to the rotation.
