Easy Sugar Cookies

Super easy cookies. Made with white whole wheat flour and egg beaters because that is what I had on hand. Melted the margarine as others have noted and the cookies were great. My scooper is big so it only made 30 cookies.

Apple Pie Muffins

What a gorgeous muffin. I was wary about filling the muffin tins to the top. I even filled a little over - but they turned out beautiful. I did make changes because of what I had on hand and the other reviews. I used 1/2 cup of apple sauce instead of butter in the batter. I used 1/2 brown sugar and 1/2 white in both the batter and topping. I didn't have buttermilk so I used 1 cup of milk and 2 tsp of vinegar. I tossed the apples with 2 tsp white sugar and 1/2 tsp of vinegar. I forgot to put in the vanilla. They turned out great anyway! **I also used white wheat flour to up the fiber content.

Sausage Balls

Great recipe. Tastes awesome. If you let the sausage and cheese sit out for a little while before mixing then you only need to cook for 20 minutes otherwise it takes longer. The only problem I've come into is that they flatten out a little bit and don't hold their shape. I use a fresh ground sausage from a meat market that doesn't have tons of fat. I also added a little bit of grated onion and jalapeno.

Chicken and Red Bean Enchiladas

This is a great recipe because you can make it with what you have in your pantry. I roasted a chicken in the crock pot and used that. I also used a can of tomatoes with green chiles (rotel) that I pureed in the blender with chili powder. I didn't have pepper jack cheese so I used a combination of american cheese slices, fat free cream cheese and mozzarella. It was still very yummy. Really, this recipe is great because you can take it and make it your own!

Heavenly Hot Dog Sauce

Not enough sauce in this sauce as written. Had to use a whole can of tomato sauce instead of 1/2 cup and it needed more. I added probably 3 tablespoons of chili powder and 1 tsp of dried minced garlic. It was still bland but that is okay for a chili sauce. Without the extra sauce and chili powder it would be just like topping your hot dog with ground beef. I probably will not make again as it seems a waste of 2 1/2 pounds of hamburger.

Bou's Chicken

My husband and kids devoured this. They ate everything down to the bones. I sauteed some frozen onion and bell pepper in olive oil before making the sauce. When I make this again I will take the skin off the chicken as there was just a little too much fat for my liking. I will also add a little red pepper for heat.

Italian Pasta Salad I

I really liked this recipe because it is super easy and has fewer steps than many other pasta salad recipes. I tweaked it a bit by using what I had on hand. I had garden rotini pasta and used 8 oz. I used a frozen steam-in-bag mixture of broccoli, carrots and cauliflower (cooked per directions). I then added 1/4 cup chopped onion and 1/2 jar of roasted red pepper. Lastly I added 1/2 cup each of the following: Italian salad dressing, light Caesar salad dressing and Parmesan cheese. This is an easy simple recipe that can be prepared with what you have in the pantry. I gave it 4 stars instead of 5 because it is heavy on the dressing. Next time I would use less. I've posted a picture - it looks great and would be nice for a summer potluck dinner.

Classic Chicken Noodle Soup

I used whole wheat spaghetti noodles that I cooked in another pot and then added. It turned out perfect. The only thing I would change is when making the soup base I would leave out the skin of the chicken. It would make it a little less fatty.
