Easy Sugar Cookies
Super easy cookies. Made with white whole wheat flour and egg beaters because that is what I had on hand. Melted the margarine as others have noted and the cookies were great. My scooper is big so it only made 30 cookies.

Apple Pie Muffins
What a gorgeous muffin. I was wary about filling the muffin tins to the top. I even filled a little over - but they turned out beautiful. I did make changes because of what I had on hand and the other reviews. I used 1/2 cup of apple sauce instead of butter in the batter. I used 1/2 brown sugar and 1/2 white in both the batter and topping. I didn't have buttermilk so I used 1 cup of milk and 2 tsp of vinegar. I tossed the apples with 2 tsp white sugar and 1/2 tsp of vinegar. I forgot to put in the vanilla. They turned out great anyway! **I also used white wheat flour to up the fiber content.

Sausage Balls
Great recipe. Tastes awesome. If you let the sausage and cheese sit out for a little while before mixing then you only need to cook for 20 minutes otherwise it takes longer. The only problem I've come into is that they flatten out a little bit and don't hold their shape. I use a fresh ground sausage from a meat market that doesn't have tons of fat. I also added a little bit of grated onion and jalapeno.
