Beefburger Parcels

The first time I made the recipe as is except the sauce. For the sauce I used beef broth, red wine and worcestershire sauce and cornstarch. The second time I made it I added chopped green pepper to the mushroom mixture. I don't put it seam side down, I like all the "puff" to be on top and not soaking up the grease. I need to buy a rack to get them out of the grease.

Chili Rellenos Casserole

I made the recipe as is except I chopped the peppers and used enchilada sauce in place of tomato. It was very good, but not really "chili rellenos". Maybe if I used Queso Blanco instead of cheddar it might taste more authentic. Also it needs some sort of crispy fried batter like real chile rellenos, maybe crushed fried onions on top or something. It was still very good and a tummy filler. I served it with mexican rice and beans.

Mexican Cream Cheese Rollups

I made the recipe as is and agree with most others that the olives were too overpowering. My rating is based on the recipe as-is. I made it again with no mayo or green olives and added fresh salsa (in the cream cheese) and mexican spices. Will definitely make again. It's perfect for a potluck type of affair.

Overnight Asparagus Mushroom Strata

This is the most amazing breakfast I've ever had! Moist, tender, savory.....sheer heaven in my mouth. For couples I recommend halving the recipe and using 8x8 dish as this dish is best eaten fresh out of the oven. Leftovers tend to be tough and rubbery, but still yummy!

Mexican Casserole

I changed it to suit my tastes, no soup, and next time I'm using more tomatoes....it needs a little more liquid. But a great idea and perfect foundation to build your own.

Artichokes

Why everyone makes this so hard is really beyond me. All I do is trim off the end of the stem and peel with peeler, leaving the stem on. Cut in half long-ways. Rinse with water. Put in steaming basket and steam until tender. Use a spoon remove choke. Can't get much simpler than that.
