Cream of Green Garlic and Potato Soup

this is incredible soup!!! I am eating it right now and couldn't be happier!!! :D I know as written it deserves 5 stars, but I made some changes. I used green onions and a 1/4 of leftover white onion diced. I used 3 pieces of bacon chopped. I only used 2 and a half potatoes, but they were really big. I added roughly 2 teaspoons of cayenne because I like things spicy. I used a little more than half a cup of cream because I love it. I used lots of freshly ground black pepper and instead of chicken broth I just used salted and seasoned water. I am glad I left out the extra potato!! this is plenty thick, creamy, and delicious. Also, I only blended 3/4 of the chunks and used a masher on the others.. This is like heaven soup :) I will definitely make this again!!! it has so many possibilities!! Thank you chef John!! your video for this recipe is very funnily narrated :)

Classic Hash Browns

these were great! I added some onion. The paprika and cayenne was nice, and I added a teeeeny bit of curry powder. I will definitely make these again!

Spring Lime Tea Cookies

I took off a star because this needs way more lime juice in the batter. I used the juice of 1 and 1/2 limes. I used coconut milk because I don't like regular. Mine needed about 1/2 cup more flour, and it was still a very soft dough. I should have added more. I think you should chill this dough first. I am eating one now!! they are big and soft. With the glaze, they are wonderful!!! I followed the recipe with white sugar and lime juice. I will make again for sure!! I made these to go with some lime green tea :) **Edited about a week or so later.. This time I added less milk and mostly lime juice. I also added some nutmeg, per another reviewer and it highlights the lime nicely! I chilled the dough this time and it made it so much easier to roll attractive balls rather than gooey blobs. These need longer than 10 minutes (for me).. more like 15-20. So delicious! This time I also used half coconut oil and half butter cause I ran out of butter. I think it made them softer!

Coconut Shrimp I

this was really delicious!! I will use more beer next time, or coconut milk to make the batter thinner. I may have packed on the coconut a little too much :) still tasty! I got excited.. Next time I won't pack it so densely. I used a stick of butter, a cup of coconut oil, and 2 cups of some random canola oil because that's all I had. I used Mounds brand coconut and it worked really well!! I didn't need to chop it in the blender. For sauce, I made two: honey, horseradish and mustard (will try marmalade next time) and a mayo-siracha mix which I really liked on them :) All in all, a great recipe that requires no tweaking, that I will use often!!

Garlic Parmesan Orzo

This was really delicious with a few tweaks.. I cut the recipe in half, sauteed the orzo in a skillet with 2 tablespoons of butter until it was golden, then added like a cup and half of water, brought to boil, then simmered till it was cooked. I like the flavor and color of sauteed orzo :) I sauteed the garlic which I upped to 2-3 full tablespoons with about 1/4 cup of minced shallots and then added those, with the parmesan cheese. I used dried parsley and coconut milk. This is divine!! I took one star off because 1/2 of butter would be way too much, and I LOVE butter

Pasta with Asparagus

I made this exactly but left out the mushrooms, and I used penne pasta rather than angel hair.. I thought this was really bland. I added about 5 mashed cloves of garlic and some diced red onion to the asparagus, as well as 2 teaspoons of seasoned salt. I then added like 3 teaspoons of seasoned salt and some black pepper to the combined pasta and asparagus mix. I like a lot of flavor in my dishes. Then just for fun I added a huge tablespoon of Turmeric because I wanted to use up the rest of my jar :) it also made my pasta bright yellow which looks nice with the green asparagus :) For those that like 'fresh' or 'light' dishes, this could be like 5 stars but was a little boring for me

Easy Indian Butter Chicken

this is amazing!! I just made it with scallops instead of chicken. I used one 14 oz can of coconut milk, with almost half the 15 oz can of tomato sauce. Instead of onion and garlic, I used half a shallot. I added one full tablespoon of turmeric, because I am new to it, and like its flavor :) I also added a dash of cumin. This is truly incredible!! I just took one star off because the original recipe has so much butter. I made this with Indian Basmati Rice from this site!!

Baingan Bharta (Eggplant Curry)

this is an amazing recipe!!! I am eating it right now :).. I took one star off for a few reasons. I think there should be 2 eggplant in this. Also, I think coconut milk is more traditional than yogurt, so that's what I used. Like other reviewers, my pan burnt on the bottom during the 10 minutes of high heat. I will definitely be making this again!! I used a 14oz can of tomatoes, but next time would double it :) yum!!!

Ricotta Gnocchi

I am eating this right now and I am pretty happy!! I added a few cloves of mashed garlic to the dough- won't use garlic powder. The dough could have used some more salt.. in my mouth, they start out doughy but then a cooler texture is revealed with more chews :) I made my own sauce out of a sauteed onion and like 6 huge cloves of garlic, with a sprinkle of cayenne and then threw in a jar of roasted garlic sauce.. I really like the onions in it!!

Artichoke Bruschetta

OMGOMGOMGOMG!!!!! This is so amazing!!!! I just made this and devoured it and it's one of my all time favorite foods now!!! WOW.. I followed directions exactly except my can of artichokes was 14.5 oz, but since I don't like the slightly harder leaves, I trimmed them so that maybe made the artichoke mass less :) I also guestimated the mayo, but probably used 4-5 tablespoons cause I LOVE mayo :) I also used a pre-sliced baguette which made life so much easier! I will make this ALL THE TIME!!!!!!!!

Vegetarian Meatloaf with Vegetables

I am a new vegetarian, but got a craving for meatloaf! this was really tasty!! I did a few things differently, such as use like 4-5 cloves of real garlic.. I used one piece of bread and a cup or so of store bread crumbs.. I think next time I will just use the real bread :) I accidentally added the whole package of Gimme Lean beef, so maybe that's why mine was mushy? -probably also the bread crumbs.. I also used the ketchup/mustard/sugar glaze for mine. I also took another reviewers advice and sauteed the onion for a few minutes so they were soft and fragrant! other than that, I followed the recipe- oh! I didn't use the veggies.. just put the loaf in a bread loaf pan and made mashed potatoes!!! I have been a vegetarian for almost a whole month, and I haven't felt this satisfied since I started! it almost tasted and had the texture of meat! so cool!! :)

Fairy Godmother Rice

I am making this right now, and some other reviwers said it was too salty so I only added one packet of onion soup.. but I just tried it and it wasn't cooked enough/nor nearly flavorful enough, so I added the second packet and some extra water. I added one small chopped onion and some chopped baby carrots for more veggies and I didn't have noodles or water chestnuts so they got left out. I think this will be an interesting side dish that can be altered in cool ways!! I will continue the review in about 20 min when I retest it :) ok... so with the extra packet of soup, AND liberal soy sauce.. this finally has some flavor.. I don't know if I will make this again, but maybe! I think this would be better with the noodles..

Cream of Broccoli Soup I

this was my first time making and eating broccoli soup!! omg this was delicious, and took probably less than 20 min start to finish. I had lots of steamed broccoli from the night before, so I used that and didn't have to cook it!! I halved the recipe since it was just for me, and it came out so amazing!! I didn't have celery or nutmeg but that's ok :) I used a mix of half heavy cream and half water since I didn't have milk but prefer the cream anyway! I used one can of beef broth instead of the broccoli-boil water+ the chicken boullion stuff. I prefer beef broth in soups :) This was a gloriously simple recipe that I will use many times!! it makes my soul happy :)

Artichokes

I am making this right now, and I already like the idea of the butter and garlic in the leaves. I am deducting one star because no where in the directions does it say when and where to add the salt and pepper so I omitted the pepper and added a little salt and splash of balsamic vinegar to the water. I am also taking off a star because the recipe gives no dipping sauce suggestions, and one tablespoon of butter in the leaves is definitely not enough. I just tested at 20 min and it is still really hard. I also used about an inch of water. I gave my artichoke 15 extra minutes and I think that will be good. so excited to eat it!! I will serve with mayo like always :) maybe butter also. I appreciate this recipe! *****UPDATE: after eating, I see that they need to be cooked for at least 45 minutes. I LOVED the garlic in the leaves and next time will quadruple the amount. I think all the butter melted out of the artichoke so I probably won't be doing that again. Loved it though! yay

Lemon Horseradish New Potatoes

I just made these as the recipe says. I cooked mine at 350 for like an hour and 20 minutes.. they still seemed like they needed to crisp up a bit and weren't fully soft. Usually when I make red potatoes I cook them at 400*.. I will be making these again for sure but next time I may double the horseradish and use 5 or so cloves of minced garlic. These lacked flavor but I only took off one star because I know they could be great with some tweaks :)

Carolyn's Sensual Sea Bass Fillets with Crawfish and Crab Sauce

I made this without the crab and crawfish. I also didn't have white pepper or parsley. I used like 4 cloves of garlic and I think you could cut back on the butter by half. This is really good, I think next time I will omit the flour and maybe use cornstarch? I think that would work better. or maybe not use it at all. It sort of tastes like alfredo sauce on fish but that is fine with me :)

Wilted Spinach

This was my first time making wilted spinach and it came out heavenly with some changes. The amount of sauce is WAY too much and I used a whole 6oz bag of spinach and I dumped 90% of it out and there was still plenty. I used fresh minced garlic, and omitted the pine nuts because I just wanted it without them. I also added about 2 tablespoons of soy sauce trying to emulate my favorite sushi place. This is really amazing and will be eaten several times a week!! Also, don't be afraid to use more than just a pinch of pepper :)

Greek Honey Cake

this came out just as amazing as I thought it would! I added lemon zest instead of orange. I cut the syrup recipe by half and I used mostly honey and about a quarter of the white sugar. Added like 2-3 tablespoons of lemon juice to the syrup and it is just amazing!!!!! I used a round pan and it looks just like the main picture :) this will be made OFTEN!!! I just ate 4 pieces!! ***** This is an update!! this third time making this I decided to use honey instead of the sugar in the cake itself since the name is Honey Cake, not granulated sugar cake... it was so moist from this that I didn't need to add the milk. For the syrup I used about a cup of honey with like 5 tablespoons (a splash) of orange juice and one tablespoon of sugar and it is so good!! the best one yet!

Marinated Wild Salmon

This recipe is really flavorful and light, however I am only giving 4 stars because if left in the marinade for too long (6 hours-overnight) the lemon can cook the fish and then it will be overcooked. I marinaded mine for 2-3 hours and the cilantro really came through!! I followed the recipe except used cayenne instead of pepper flakes cause I didn't have them. I also didn't have the green onions so I may have used more garlic. I could have used less vinegar, but it came out tasty! I also used double the cilantro.
