Lemon Soup

My husband's grandmother used to make this for us and it is one of my favorites. I think the only thing I would do differently is make my own chicken stock (the store bought one was a little salty for me) and perhaps add a touch more lemon juice. I was pleasantly surprised at how good it did turn out though!! Perfect for the cool evenings of fall that have begun!

Slow Cooker Cranberry Turkey Breast

I used frozen chicken breasts instead of turkey (cooked it about 12 hours on low) and served with mashed potatoes. It was soooo incredibly good! Will most definitely be adding this one to the "do again" file!!

Caramel Shortbread Squares

These were excellent! A definite add to the "do again" file (as my husband calls it). I followed some of the tips from other users and poked holes with a fork into the cookie base. I made the caramel mixture at a lower heat. I preferred eating them cold myself! Overall, one of the better squares recipes I've tried in a long, long time!

Quinoa and Black Bean Chili

Bacon and Date Appetizer

I made these for a dinner party and they were a huge hit!! I did half of them with just the almond in them, the other half I did with the almond and a small piece of feta. Definitely a great mix of the sweet/salty that so many people like!

Kalamata Olive, Tomato, and Cheese Melt

We had this for dinner last night and the only problem with it is that it's way too easy to eat! It really hit the spot. I made two small modifications because that's what I had in the house. Instead of a jalapeno, I used 1/4 cup of pickled jalapenos and I only had a small bit of reduced fat cheddar, so I topped up the cheese with some Pepper Jack. Very tasty!

Buffalo Chicken Wing Soup

I healthified this recipe by using fat free soup, fat free milk and low fat sour cream, but it was absolutely amazing. For anyone who likes buffalo chicken wings, I would definitely recommend this recipe... not to mention how easy it is!!

Slow Cooker Sausage with Sauce

I've made this recipe a lot and it's always a hit. I use Roma hot italian sausages and have never had a problem with too much grease. I do add a bit of salsa to the jar of spaghetti sauce though, just to give it a bit more of a kick. Served on a fresh ciabata bun with provolone cheese is amazing!

Mexican-Style Goulash

I made this following some of the suggestions - I added a bit of garlic powder and cumin. My husband thought it was delish just as it was, I added a tiny bit of sriracha sauce just before eating because I like food with a bit of a kick. I think the only thing I would change next time, is that I would cook the pasta separately and then add it to the mixture. It wasn't exactly mushy, but it was a tiny bit too cooked for my liking.

Autumn Cheesecake

I made this cheesecake for dessert for our Thanksgiving meal. It was so easy to do and the results were absolutely amazing! It was light and sweet, but not too sweet! The only modification I made was to add mostly brown sugar to the apples instead of white sugar. I think next time, I may try and double the cheese filling part. A definite add to the "do again" recipes!!

Strawberrylicious Daiquiris

These were fantastic, but with the sweetened pineapple juice, I omit the sugar to keep them from being overly sweet! If I'm out of juice, I'll just use frozen strawberries and a banana for some sweetness.

Quick and Easy Yorkshire Pudding

Calamari Steaks Parmigiano

I used this recipe, but made pork cutlets instead of calamari. They turned out great. The flavor was good and I followed one of the suggestions of placing the pork on top of the sauce instead of mixing them together so that the breading wouldn't get soggy. Will definitely make again.

Bacon Cheeseburger Meatloaf

I didn't have any bacon at home, so I used crumbled bacon bits (the real kind, not the simulated ones). I found it was almost too moist (fell apart). Next time I would omit the onions (I didn't even use the full amount called for, but they were overpowering), I would leave out the mayo and would add some spice to it. Probably garlic powder or crushed chilies. Otherwise, the potential was there, I just wasn't hugely pleased with the end result.

Really simple, light and fluffy pancakes. I added a 1/2 tsp of vanilla, but I think next time I'd add a bit more and maybe a tiny bit more sugar.

Souvlaki

I bought some pre-made beef and chicken kabobs from the grocers. I reduced the serving size to 6 and put them in for about 4 hours. I didn't try the beef, but the chicken was excellent. Just a subtle flavor, but definitely a recipe I'll keep on hand for making my own kabobs with next time!

Creamy Rice Pudding

This was my first time ever making rice pudding at home. This recipe is great, but I think I'd use a bit less sugar next time. I like it a little less sweet. Definitely will make again though!

Ultimate Twice Baked Potatoes

I've never made twice baked potatoes before but tried these to serve to some friends along with a beer butt smoked chicken. They were amazing! Definitely will be making these again. So easy and so tasty!

Easy Chili I

This recipe was so easy and really turned out well. I didn't have a jalapeno, so I used the pickled ones I usually use on nachos. I also substituted 1 large can of tomatoes for 2 small cans of the ones with spicy red peppers. Just enough heat to keep us warm on a cold winters night!
