Mom's Macaroni and Cheese

This is my go-to macaroni and cheese recipe. My kids really like it. I made a few variations to the original recipe however. I make 2 cups of elbow macaroni and increased the pepper to a 1/2 tsp, added 1 tsp of mustard powder and increased the shredded cheddar cheese to 2 cups, I omitted the processed cheese and added 2 ounces of extra old cheddar cheese for its sharpness. I used crumbled up ritz crackers on the top instead of bread crumbs and added extra cheese to the top at the end. Delicious recipe.

Classic Bran Muffins

I just finished making these muffins. Like others suggested I substituted applesauce for the vegetable oil and I omitted the raisins altogether because I hate raisins. They turned out awesome and I've already eaten two. :) They are quick and easy to make and a great, healthy breakfast muffin. Love them.

Jenny's Grilled Chicken Breasts

I found that this recipe made the chicken breasts a little dry and the combination of spices made it very salty. The recipe calls for the breasts to be grilled 10 to 15 minutes per side and that was way too long as the chicken ended up overcooked and dried out. I suggest cooking about 6 minutes per side so that the chicken is cooked through but is juicy. I served it with a fresh mango salsa and that made all the difference. Not sure I would make this again.

Mango Salsa Salmon

This recipe was easy and tasty but missing some zing, so I added 2 tbsp. lime juice, 1/2 diced red pepper, 1 jalapeno pepper - seeded and diced, salt and pepper to taste. It tasted wonderful over my grilled salmon. I have already made it twice, it is so fast to make. It would probably taste good over grilled chicken breasts too.

Basil Chicken over Angel Hair

This recipe was FANTASTIC! I used really ripe plum tomatoes and it is essential to use FRESH basil. I used a little more hot pepper sauce than the recipe called for and omitted the Parmesan cheese altogether. I also cut the salt in half and added some dried oregano and freshly ground black pepper. I found this recipe very simple and easy to make. Delicous - will make again and again. Thanks!

Angela's Easy Breaded Chicken

Definitely easy! I pounded out the chicken breasts first. Tasted okay although my husband didn't care for it at all. The italian dressing takes some getting used to. I would rather spice up some bread crumbs, dredge the chicken in beaten egg first and then in the bread crumbs and bake. Not sure I would make this again.

Lemon Poppy Seed Bread

Very quick and easy to make. This recipe makes only 2 loaves not 3, unless you want really tiny loaves. I added some lemon zest to this recipe. It turned out good but not lemony enough for me. I may have to play a bit with the recipe, it was missing something. I didn't make the glaze for the top so that may have something to do with it. I would definitely make again though! Thanks.

Garden Fresh Tomato Soup

I should have used tomatoes that were better, I used hot house vine ripen tomatoes. This recipe was good but not great. I skipped the roux altogether but added a cup of whole milk, garlic, pepper, bay leaf, fresh chopped basil and some oregano. Also I peeled the tomatoes and cored them before boiling them in the pot. I removed the bay leaf and cloves before blending it all up nice and smooth using a hand blender. My husband thought it was delicous I think it would probably taste better the next day once all the spices had a chance to infuse it.

Chicken Breasts Pierre

This recipe was fantastic. I made it for dinner tonight and served it over white rice. Yum, yum! I used a can of diced tomatoes with sundried tomatoes in it and I added a little more water to the recipe. Superb and so easy to make. I will definitely make this again. It was a hit in my house. Lemon Pepper Dill Fish

This was so easy and delicious. I didn't have any lemon pepper but it didn't matter. Also, I used fresh cut dill. I did what one of the reviewers suggested and baked it in the oven.

Greek Style Potatoes

These were easy to make and tasted pretty good. They still didn't taste as good as the ones I can get at the local Greek restaurant though. Definitely better than boring old boiled potatoes. Couldn't get my 3 year old to eat them but that's okay - she doesn't like potatoes anyway. Will make them again. Thanks Cathie!

The Old Boy's Strawberry Pie

This pie was very easy and very sweet! I thought the crumble topping might taste better made with brown sugar?! It seemed to harden up a lot and not really "crumble". I may try brown sugar next time I make it. Also, a tip if you have extra flour, sugar and cornstarch that does not mix in completely with the strawberries throw it out and do not add it to the pie. I made that mistake and it all sunk to the bottom of the pie so there was a thick layer of white gooey liquid at the bottom. Other than that it was a quick and delicious pie!

Easy Key Lime Pie I

This was definitely the easiest pie I have ever made and it was delicious. I used 4 egg yolks instead of 5. I had a tough time getting used to the colour since I am used to key lime pie being green. Maybe next time I will add green food colouring to it like other reviewers have suggested.

Turkey Pot Pie I

I made this for dinner tonight with chicken instead of turkey. It was very good and like other reviewers suggested I added more chicken stock and a 1/2 cup of peas. I felt that there was too much parsley in this recipe and in future I will add 2 tbls. instead of three. I also used soy milk instead of regular milk.

Caramel Pecan Pie

I made this pie tonight for my family for dessert. Everyone thought it was awesome. I have never made a homemade pecan pie before and this was so easy. It turned out perfectly and tasted so good. As suggested by other reviewers I used only 1/2 cup of sugar and I used brown sugar instead of white sugar. I also only baked it for 40 minutes and used a deep dish pie plate. I will definitely be making this pie again. Thanks Corwynn!!

Vegetarian Phad Thai

I didn't think this recipe was that great. Submerging the noodles in hot water for 1 hour was WAY too long. The noodles turned out way to soft. I did cut the brown sugar and peanut butter in half like the other reviewers suggested and I thought the sauce was very good. Not sure that I will make this again.

Brown Sugar Meatloaf

I never make meatloaf because I never liked it as a child when my Mom used to make it. This recipe was so good though. Moist and delicious - I loved it and my husband thought it was awesome! I made the Savory Mushroom Sauce from this site to go over it, however it really didn't need it since the brown sugar and ketchup made a nice glaze for the meatloaf. This will now be a staple in our house. Thanks!

Savory Mushroom Sauce

So easy to make!!I made this sauce tonight for over meatloaf and boiled potatoes. It was really good, except I felt that the basil flavour was a little too strong, I think I will cut it in half next time. My husband loved the sauce. I also made one modification, substituting beef stock for the milk. Thanks!

Easy Chili I

This is a great recipe for chili. I modified it slightly though by adding a can of red kidney beans and a can of baked beans to the recipe. I also added a tsp. of oregano to it. I found it way too hot the first time I made it so I cut out the jalapeno peppers altogether. This recipe makes a lot so I froze half of it for a fast dinner some other night!
