Sour Cream Pumpkin Bundt Cake

This is the best cake EVER! I've made it 3 times now; the first time for a work birthday where someone almost cried it was so good, the second time for my boyfriend to take to work but he wouldn't let it out of the house, and the third time I won first place at a bake-off! I use pumpkin pie spice instead of cinnamon in the cake, canned pumpkin pie mix (all they had left at the store), and microwave cream cheese frosting to pour over the cake. It tastes even better the next day!

Tea Time Tasties

These are great! I used 2 cups of chopped pecans and it was more than enough. Also, I used regular-sized muffin tins and called them Pecan Tarts. Excellent!

Crunchy Peanut Butter Balls

Wow, these were so good! I also used 2 cups of rice crispies, and refrigerated the "dough" for an hour to make it more user-friendly. I microwaved the chocolate chips in a large glass bowl and then rolled the peanut butter balls in the chocolate to coat. This made the process fairly easy. Will definitely make again!!!

Stuffed Blueberry Toast

The cream cheese mixture was a little too much, but I'm sure it would be great with just a little less. Whole wheat bread holds up well, and the taste tones down the sweetness a bit.

Mexican Chicken Kiev

Based on other reviews I used pepperjack cheese which was great! To kick up the heat I also added a dash of red pepper flakes to the bread crumb mixture. No butter necessary, I cut out some fat by using a light spray of PAM on the baking dish and over the top of the chicken.

Pesto Chicken

I thought this tasted great, but my picky boyfriend wasn't too thrilled (I think he's just so-so about pesto in general). The prep was super easy, and the house smelled wonderful while this was baking.

Sour Cream Apple Pie Deluxe

One of those desserts that taste great the day you make it, and incredible a couple days later. I added golden raisins to the filling, slivered almonds to the crumb topping, and used reduced fat sour cream. This pie freezes beautifully, which makes it handy to have just in case company drops by.

Triple Berry Crisp

I scaled down to 1 cup of butter and 1 cup of brown sugar to save on calories. Also, I used fresh peaches and blueberries. It was good that night, but AMAZING after 2 days.

Mound Bars

I added vegetable oil to the chocolate and it was STILL hard as a rock. Next time I'll just sprinkle the chocolate chips over the top, who cares if they form a solid layer of chocolate. Very tasty though.

Seriously, SO GOOD! I simmered the raisins in orange juice which adds a very nice touch. This was my boyfriend's birthday cake and he absolutely loved it!
