Honey Bun Cake I

This is teriffic! My 15-year-old grandson's favorite cake. Everyone wants the recipe. I changed the topping just a little. I add a melted tablespoon or so of real butter, cut back on the milk and the vanilla (I think a tablespoon is way too much. Sometimes I add some cinnamon to taste (grandson likes cinnamon also).

Catherine's Spicy Chicken Soup

Could not stop eating this! For half a recipe used only one can of diced tomatoes, no tomato soup, no beans and frozen corn. Used part pineapple salsa and part homemade salsa. I forgot the sour cream and it was still wonderful!!! Can't wait to try it with the sour cream (and beans).

Fluffy Gluten Free Cornbread

My family and I loved this cornbread. I followed the suggestions of others and used the xanthan gum. Since I wanted a little more cornmeal flavor, I used 1-3/4 cups cornmeal and 1-3/4 cup gluten free all purpose flour. It was moist, not crumbly, and had a very good flavor. Can't stop munching on it! I have missed bread since going gluten free and this really satisfies me!

Blueberry Cream Muffins

I did not care for these muffins, nor did my son. He said they were the worst I had ever made! I make my own all-purpose baking mix and usually use it when I make muffins. Mine are so much better. Mine have much less sugar, but these were not sweet or flavorful. I agree with one person who said they lacked something. I'm sure I will not make these again. To top it all off, I made these for a bake sale because I wanted something out of the ordinary. Also wasted a whole container of sour cream.

Pumpkin Roll

I have always used the powdered sugar on a towel method, and powdered sugar gets all over everything. So this time I used the wax paper and rolled it up in the wax paper. Big mistake! I am annoyed with myself for not realizing that with no towel to absorb the steam, the cake would get soggy. I had a terrible time getting the cake unrolled, it split on me, and I finally did get it rolled back up but it looks awful. Not sure how it going to taste since it was soggy. Back to the powdered sugar and towel!
