Very light...perfect for a summer dish. While I wasn't bowled over by the flavor on a pasta dish, I think this would be great on a homemade pizza or bruschetta.

Pretzel Chicken Chunks

Not bad, the pretzels have a tendency to become more chewy than crisp. The marinade without the pretzels is great though.

Excellent recipe!! Probably should call for some additional salt and pepper. Also, I substituted the shredded mozzarella for cubed chunks, mainly because I always look forward them.

Burgundy Pork Tenderloin

Awesome dish, very easy. You're really going to want to salt and pepper well before baking. I used sea salt and coarse ground pepper and of course, the garlic powder. I took the advice of a previous review and used two cups of wine and that was perfect. Also, you'll want to double the gravy mix otherwise you'll be left with more of a sauce which is great, just not a gravy.

Very good but mis-labeled as a soup. I let this sit about an hour and a half and all the liquid was absorbed. However, what was left was quite good! I added a bit more seasonings and some crushed red pepper for a bit of kick.

Tuna Salad With Fresh Dill

Not bad. My girlfriend felt that the dill was a little too strong but I loved it. Not very mayonnaisey which, for me, is a GOOD thing. Took awhile to chop everything up. Still leaves a bit to be desired...

Chicken Flautas

Great, great Recipe with a few modifications- First off, do not use cheddar cheese-it adds a funky taste. I would recommend a nacho cheese blend. Second, you will need a lot more oil than what is suggested for. I ended up using about a tablespoon for every 2 tortillas. When using the corn tortillas, you need them as pliable as possible which requires the oil.

Sensational!! So easy and absolutely delicious!! I read one review that recommended using twinkies instead of the pound cake and they were fantastic. Definitely use twice the amount of milk, it will make for a very creamy, very smooth custard.

Brian's Favorite Sauce

Great starter sauce!! Basically, this recipe gives you a good base and then you add extras depending on your tastes. I read some of the previous reviews and used less stewed tomatoes and added a can of tomato paste. I also added red pepper flakes for a nice kick and a pinch more sugar. NOTE: You absolutely have to simmer this for 3-4 hours, minimum. I tried a taste after about an hour and was disappointed. I waited four hours later and was blown away by how much difference the simmering made. A definite winner!!

Acapulco Chicken

A real winner!! I let it simmer about 15 minutes longer and served it over Spanish rice and it was fantastic. I used an additional jalapeno and a considerable amount of hot sauce and it still was only "fairly spicy." I would recommend and extra hot pepper and maybe even a few hits of cayenne.

This dish was just OK. The sauce was very flavorful but it didn't seem to blend quite right with the red snapper. I wouldn't be against trying this with talapia.

Seemed simple but was very disappointing...Spicy as all get out but that's about the best thing I can say for it. Whoever things that 20 minutes is enough is ridiculous. Even simmering for longer didn't help. Not worth the time and certainly a waste on the taste buds.

Pumpkin Curry Soup

Fantastic soup!! Very easy to make and you can cut down on the fat drastically by using nonfat evaporated milk. I used double the curry and half the milk which made the soup alot heartier. Other than that, it's a definite winner!!

Moroccan Chicken

I honestly didn't think I was going to like this because I'm not a huge fan of zucchini and chickpeas but it was delicious. Needed some salt and pepper when done but otherwise, was very good. I served it over a blend of wild rices but next time I would include some light bread to sop up the remaining juices.

Brown Sugar Meatloaf

Fantastic recipe!! Cut down on the brown sugar, I just sprinkled some to coat the bottom and it was plenty sweet. Great comfort food with some mashed potatoes.

Very good, flavorful. There are a couple of things I would note. The sauce you are to make at the very end from drippings will require a lot more than is suggested in the recipe. You will need to add more wine, more paprika, more oil. Also, you will probably need to add a more salt and pepper than you would think. Other than that everything should be very delicious.

Pan Seared Salmon I
