Best Bread Machine Bread

Oh wow! I've never had such success with making bread, this was fantastic! I followed exactly except that when I checked it half way through the cycle to my surprise it had risen so much it was touching the lid! So, I took it out, punched it down and then let it rise again in a loaf pan. I baked it at 400 for 20-22 minutes and it was perfect. I have made a second batch now but used butter instead of oil and am making it into cinnamon swirl raisin bread! BTW

Softest Soft Bread with Air Pockets Using Bread Machine

I'm not really quite sure how to rate this, to be honest. The loaf is only about 4 inches high. My yeast was fine, as it proofed perfectly, yet this loaf just didn't rise for me. However, the inside is a lovely texture, full of little air pockets as promised, and it smells heavenly. I think if this had risen well it might have been fantastic.

Basic Corn Muffins

I'm so confused! I was excited to find a "basic" recipe that I could jazz up myself...I added minced jalapeno, shredded zuchini, diced roasted red peppers, chives, onion powder, paprika, cayenne, and grated extra-old cheddar....they looked and smelled amazing, and then I took a bite....and they were BLAND! I have no idea how this happened...the only thing I can think of is that they need WAY more salt. Sigh...it's like a bad prank that I added so much flavour and they seemed to magically make it disappear. Maybe next time...this recipe is a good base in that they had a good texture and consistency...thanks anyway.

Blueberry Shortbread Bars

I had some problems making this...I needed MUCH more liquid in the shortbread mix (I used almond extract and lemon juice with water) to get it to that stage where it will hold together...probably as much as 1/3 cup...It made me nervous, and I'm a confident cook usually. Then, I used wayyy more blueberries, and added brown sugar to the crumb for the top. I cooked it for the 45 minutes, and though it has yet to cool, I am suspicious that it will not hold as a bar...I think I've made a nice crumble topping for icecream. Sorry Chef John...you're great but this one left me puzzled. PS~for those of you who haven't tried five-spice, leave it out...it's an acquired taste. I used cinnamon and nutmeg.

Pumpkin Bread IV

I changed this recipe as I was making it because when I halved the recipe the proportions seemed way off. It was very dry, almost a dough rather than a batter....SO, I added twice as much pumpkin puree and I'm glad I did. They turned out great (I did jumbo muffins, 30 minutes at 350)...One more tip is that I beat the eggs with a whisk for a minute before adding for a bit of airiness... and I also added ground ginger and less sugar.

Pickled Onions

I really liked these, but next time I'll make a few changes. I would add less salt and a bit more sugar, maybe two tablespoons. Also, I tried these without steeping first and then after they'd steeped...I would skip it if you enjoy a crisper onion. They were tasty and I plan to refrigerate them until burger-nite in a few days. Thanks!

Bacon and Caramelized Onion Rolls

These were absolutely great. I made some changes (I always do, can't help it). I added some shallots with the onions, then about half way through caramelizing I added some minced fresh rosemary. I also used more of everything (bacon, cheese, onions) and added some fresh chopped chives for colour and flavour. I didn't have any wine, so I just skipped it...the onions are sweet and I don't think I missed much by leaving it out. I would emphasize that the onions need at least 20 minutes over medium heat to be perfect...rushing will ruin them. I didn't have smoked cheese, so I used aged cheddar instead. Flavour and texture was perfect. The only minor criticism I can think of is that 3T of butter for brushing left me with at least 1T left wasted. Oh, and I also cut them a bit too large and came out with 8 rolls....but they were cooked at 22 minutes...any smaller and I think they would have been over-done at that time. Make sure the muffin tin is really well greased...I think I will try just baking them on a tray next time. Thanks for the recipe, I will be making these again!
