Easy Roasted Red Pepper Hummus

use less tahini, otherwise it tastes sour. I cut back to two tablespoons and it was much better.

Roasted Rosemary Chicken And Vegetables

Solid recipe. Served over quinoa cooked in veggie broth and it was delicious. The chicken isn't necessary and would make a great vegetarian dish. I bet that the veggies would go great in a pita pocket or sandwich roll too. Next time, I'd like to try it with some feta cheese!

Spaghetti Squash I

AMAZING! Not a fan of squash and this was fantastic! Cooked squash in microwave and came out faster and easier. Used dried basil, halved grape tomatos and double the garlic. Delicious and so customizable. Next time, I will try an alfredo version.

Squash and Zucchini Casserole

This was a great, easy alternative to a similar gratin I used to make every summer. I made some alterations, using parmesan instead of ramono, half the butter, and sprinkling every layer with garlic powder and basil on the squash layers. Served with brown rice drizzled in the juices from the casserole. Boyfriend went back for thirds!

Quinoa Side Dish

I'd never had quinoa before and this was a great introduction to a whole new grain! I used two green onions instead of a regular onion and dried herbs still tasted great.
