Saltine Toffee Cookies

Reviewed: Dec. 11, 2013
These are easy and everyone loves them. If it comes out grainy, the sugar didn't cook long enough or too long. I use the 'ball' test, where you have a glass if ice water next to the pan and drop small amounts of the caramel into the glass while cooking. When the caramel forms a ball immediately it's done.

Country House Bed and Breakfast Casserole

Reviewed: Nov. 17, 2013
I read most of the reviews and made a few changes. I omitted the butter and used Pam spray. I also used chorizo (microwaved for one minute to cut back on the grease, drained on paper towels)and added more cheese. I had garlic cheese crouton, which gave lots of flavor to the dish. I was so easy to throw together. I plan to make this for a brunch baby shower. I hope it holds up in the chaffing dish.

I did everything suggested so they don't come out flat, but they did. Taste great though!

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 2, 2013
I used what was in my cabinet, cream of chicken and cream of potato soup. Using others input, I threw two frozen chicken breast with poultry seasoning on the bottom of the crockpot and used broth. A bit salty, so can back where you can. I cut the chicken and tore up the biscuits and dunked them. Left them in on low for an hour before eating. I loved it! This is a good one for a sick friend, pop by with the pot:)

Chef John's Mushroom Gravy

Reviewed: Jul. 15, 2013
I made this a few times, just to be sure. Then made it for a wedding of 65 guest! I was given many excellent reviews. I really didn't know how important cooking out the moisture was until this video, no water no lumps, or at least that's how it played out. Be sure to cook the mushrooms all the way down, the flavor is great. I did add some good red wine for depth and color, but other than that it's a perfect Chef John recipe...again. OH, I did reheat it for the wedding and it came back to the correct thickness, so it can be made ahead.

Curry Stand Chicken Tikka Masala Sauce

Easy! I used whole milk and salted butter. Otherwise followed the recipe - it was better than the resturant. We will add a little more heat next time, along with veggies! thanks!

Raspberry and Almond Shortbread Thumbprints

Reviewed: Dec. 16, 2012
I followed the recipe, but refridgerated the dough for at least an hour. Using the chap-stick tube to make the indents and I put the jam in a bag, cut the corner and squeezed the jam in the indent. I also use parchment paper. I've used melted choc for drizzling too. These always turnout great, I even used apricot jam for a pretty color combo. Geat recipe, thank you so much!!

Salted Caramel Sauce

Reviewed: Nov. 3, 2012
wow! it worked just like chef jon said! looked pretty scary at the bubbly stage, but the end result is amazing! i used a heavy cast iron skillet so i worried about burning the sauce since the pan gets so hot. i'm glad i did because the color is perfect and it was big enough to contain the bubbles. thanks!!
