Hummus III

Reviewed: Dec. 31, 2012
Excellent recipe...my first attempt at making hummus. Followed other suggestions, and added cumin, paprika, cayenne, and olive oil, and some of the juice from the beans into the hummus while blending, in order to get the taste and consistency I was looking for. All additional spices were added to taste, so no measurements were given here. Thanks for sharing!!!!!

Ali's Amazing Bruschetta

Reviewed: Jun. 5, 2010
This turned out really well. I used 4 roma tomatoes, a little less onion, 1 clove of minced fresh garlic, a little sea salt and fresh ground pepper, also I subbed mozzarella for the cheese because that is what I had on hand. As others suggested, I brushed my bread w/ Olive oil on both sides and placed in oven for 3 minutes, then added the topping. Bread was not soggy and was very good. Thanks for sharing!!

Chicken Pesto Paninis

Reviewed: Mar. 25, 2010
This is a really good and easy recipe. The only changes I made were I used the Orowheat sandwich thins instead of focaccia bread and used Provolone cheese. As others suggested, I used Pesto from Classico. It is quite good and comes in either the basil pesto or the sun dried tomato pesto if you want to spice it up a little. Thanks for sharing.

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Feb. 10, 2010
WOW!!! What a great recipe. My whole family just LOVES this. I only use half of the cayenne, because some members just can't take the heat, but don't let the name fool you. No one ever knew it had cayenne until I told them. I choose to use 1 each, red, orange, and yellow bell peppers. Gives a great look and the different tastes of each pepper really compliment each other. I also add grilled chicken strips for a really good and complete meal. Thanks for sharing.

Broiled Tilapia Parmesan

Reviewed: Feb. 10, 2010
This really turned out great. My wife does not eat fish at all. But, she decided to try this and although she only thought it was OKAY...for her, just the fact that she ate it all says a great deal about the qaulity of this recipe. It is a great recipe for Tilapia and I will definately make this again.

Chinese Chicken Fried Rice II

Reviewed: Feb. 10, 2010
This turned out very well. I used canned chicken breast and minute rice. I put the rice in the fridge after cooking as some suggested. I will absolutely make this again, but I will use regular rice instead of Minute rice, just to see the difference. Thanks for sharing a great recipe.

Homemade Black Bean Veggie Burgers

Reviewed: Oct. 19, 2009
GREAT burgers!!!!!!! I have made these on several occasions, and everyone RAVES about this recipe. Since I didn't have chili sauce on hand, I just subbed mild picante sauce and it worked out great. As in other suggestions, I placed the patties in the freezer for about 20 minutes prior to cooking. This helped to keep them together while cooking with foil on the grill. A definite keeper!!! Thanks for sharing this GREAT recipe. I am now a hit with the veggie and health food crowd when I grill.

Chicken Tortilla Soup I

Reviewed: Jan. 11, 2007
Excellent tortilla soup but was a little spicy for some in my family. A lot of ingredients but well worth the effort. If you like spicy this is great. I took some out seperate for me and added some chopped habanero peppers for that extra kick.

Best Baked Chicken

Reviewed: Jan. 11, 2007
Great recipe. Missing ingredients caused some changes. No soy sauce? Try worchester sauce instead. Also subbed Jane's crazy salt for celery salt and garlic powder for the garlic salt. Chicken was moist and delicious. Used the remainder of large package of dressing mix and added chicken broth, celery and sweet onions as a side dish. Definately a keeper for my recipe collection. Thanks for sharing.

Parmesan Chicken I

Reviewed: Nov. 8, 2001
Horrible! Cooked this all day in the crock pot and a crock is what i got. The rice was just a mush mess. The chicken was tasty but the rest was totally un-edible. Will never make again and DO NOT recommend. Only wish i knew how the people that claim this is good, accomplished that task.
