Erin's Cheesy Broccoli Soup

Delicious! I did cut the cream cheese by about a 1/3 and the butter to 6 tbsp instead of 8 and used 3 tbsp flour, but put in 1.5 cups of cheese. Used 2 12oz bags of frozen broccoli (chopped in food processor after cooking). Also added salt, pepper, garlic powder. Still needed more salt in my opinion, but I like salty stuff. Very delicious- Husband, 4 yo daughter loved it, 2 yo son didn't (but he doesn't like cheese). Next time, I would cut the cream cheese and butter in half as it was still pretty rich. Soup would be good with potatoes and carrots too.

Balsamic Roasted Pork Loin

Delicious! prepared exactly as written, took quite a bit over an hour to reach 145 degrees though. 145 was perfect- it continued to cook to 160 while sitting out as we ate our salads and was done to perfection. Might add garlic next time as some suggested, but as is it's still great- use good balsamic vinegar.

Tofu with Pork and Cashews

My 4 year old has decided she doesn't want to eat animals and I'm trying to support that choice although the rest of us still eat meat. It's been hard trying to find recipes that she likes that will provide her protein. While this isn't meatless (the pork flavor adds a LOT to the taste!), after I make it, I just gave her the tofu and her 2 year old brother the pork pieces and they were both happy. Plus my husband and I both liked it. I added snap peas and green peppers, used 4 oz ground pork, and increased chicken broth by 1/4 cup and it was great! I did place the tofu between dinner plates for and hour or two to squeeze out the water, which makes all the difference- the half dozen tofu recipes I tried before learning that trick of drying the tofu were yucky.

Ma Po Tofu

Yummy! And only the 2nd time I've been able to make tofu turn out good. My changes- I used 1/2 lb ground pork and black bean garlic sauce since I couldn't find paste. I've found that tofu is much tastier if you make a good effort to squeeze out the water- I place the tofu on a plate with a plate on top of it and something sort of heavy on top of that plate and let it squeeze the water out for 30 minutes. Then it sucks up the flavor of the sauce well. Delicious!

Hearty Split Pea Soup
