Rhubarb Crunch

Doubled the rhubarb to 6 cups, added an extra 1/2 cup of sugar (I used vanilla sugar - when you use a vanilla bean throw the vanilla pod into a container of sugar and a few weeks later you'll have vanilla sugar, used a 8x8 pan and halved the topping (added a sprinkling of cinnamon to the topping mixture). Godd warm or cold!

Rempel Family Meatloaf

Umm ummm good!! I haven't made meatloaf in YEARS . . . weary of pitching meatloafs in the garbage time after time. My hubby, who is not a big meat loaf fan REALLY enjoyed this one. I made a couple changes. I used 1 pound ground beef and 1 pound ground pork, 1 cup crushed cracker, part chedder and part pepper jack cheese, a little minced red pepper, filled the 1/4 measuring cup halfway with ketchup and the rest with BBQ sauce. I also used the glaze (ketchup, honey, worchestershire) suggested by another reviewer.

Amazing Butternut Squash

I'm very sorry but I was not amazed. I'm a big squash fan too. I'm not sure what was so disagreable to me. Maybe and combo of onion/egg. When I tested for seasoning b4 baking I thought it was great/but after it was baked I really didn't care for this at all.

Cajun Catfish Supreme

My family (none of which are huge seafood fans) LOVED this. They kept talking about dinner long after the dishes were washed and put away. I subbed Tilapia, added lemon pepper to sauce, used cooked cocktail shrimp (added just b4 baking) and about 1/2 the butter. If no shrimp at hand, xtra mushrooms would be great. Only baked for 20 minutes. Great over plain white rice. A real keeper!

Slow Cooker Taco Soup

Great soup and so easy. I subbed a can of hominy for corn, black beans for kidney beans, used some of my homemade freezer tomato sauce (similar to V8)for the canned tomato sauce, added garlic, a dash of brown sugar, mexican oregano, black pepper, and cuz we like things a little extra spicey I added a few dashes of tabasco. Would be great with chorizo sausage instead of ground beef. Will do again.

Shrimp Spread II

I took this to a party and wasn't too pleased with the results. It had a funny aftertaste. Kind of strange and tarty. When I came home I noticed that my new bottle of lemon pepper reads (in small print) "artifically flavored". So I opened it and sniffed...the lemon smell was overpowering and very "artifical". Can't believe I didn't notice the strange scent when using. Now I'm convinced this seasoning spoiled the dish. So I rated it 4 stars, maybe unfairly. I would of rated it even less if I wasn't convinced that the fake lemon pepper ruined the dish.

Cheesy Shrimp Meltaways

Everyone loves these. Great with crab as well. Freezes beautifully - just pull out of freezer and bake as needed. I use about 1/2 of the butter called for. The jars of "Old English" cheese work great.

Beef Barley Vegetable Soup

Yummy! Great to beat the chill that's beginning to fill the night air. I skipped the celery (didn't have any) and used fresh corn and green beans instead of the frozen veggies. I also doubled the beef broth. Instead of the stewed tomatoes I used some of the freezer tomato sauce I had just made (it's kind of like a homemade v8 juice) using fresh tomatoes and various veggies from my garden. I also added a dash soy sauce along with some thyme. Definate "do again".

Chicago Dip

Will try again. I did add a little garlic with good results. I think next time I will also reduce the mayo/sour cream, add water chesnuts and some parm. Good with crackers, bagel or pita chips. Nice to have an app you don't have to keep warm.

Burrito Pie

Very good. Made for a covered dish. Filled a 9/13 for the luncheon, plus a small casserole for my family. I too used more cheese and added ancho chili powder (a mild chili, powdered), 1/2 teaspoon cumin, and about 1 teaspoon mexican oregano to the meat mixture. Regular oregano would work too.

Hanky Pankies

Another great make ahead recipe. I use spicey pork sausage and a little more cheese. I also do what an earlier reviewer said and freeze. When I'm having a party I make these earlier in the week. I assemble them, put them on a tray in the freezer for about 1/2 hour, then put individual pieces in a freezer bag. On party day I take them out of the freezer and bake.

Spicy Tortilla Roll-Ups

This is the perfect make ahead app. Very nice when you need an app that doesn't need the oven for baking or reheating. I sometimes use creole seasoning instead of the hot sauce. And I always serve salsa on the side. Guests love them. My family thinks they don't like black olives, so I use about 1/2 can. When my they asked what's in them I said cream cheese, mexican chiles, and seasoning. They eat them with gusto, none the wiser.

Cha Cha's White Chicken Chili

Yum!! We loved this recipe. Made some changes. Used one pound all white meat ground turkey and 2 skinless, boned chicken breasts diced. Cooked the meat together with the seasonings. Added some chili powder to the seasoning. Reduced the cayenne to 1/8 teaspoon. To further lower fat I skipped the cheese and put 1/2 can beans in food processor and used this to thicken. Garnishes on side to use as desired were: cheese, tortilla chips, sour cream, salsa and red onion. Warms your tummy in this very chilly winter!

Delilah's Frosted Cut-Out Sugar Cookies

These are without a doubt the best sugar cookies I have ever had. The same recipe my Grandma made and the ones that I have made for 20 years now. Crispy on outside, cakey inside. I leave out the milk and use 1/2 butter instead of all shortening. I also use a butter frosting (powdered sugar, milk, vanilla and butter). Outstanding!!! People always want the recipe. Also, I would suggest chilling AT LEAST 2 hours - much easier to work with.

Cocktail Meatballs

I cheated and prepared with store bought meatballs cuz I was having people over one evening and worked all that day. Came home from work, threw it all in the crock pot, freshened up and then pulled more appetizers I had prepared earlier out of the fridge. They disappeared quick!

Hot Pepper Cheese Ball

An excellent cheese ball. And I don't normally get excited over cheese balls. Don't let the name scare you. It won't set you on fire. Just great flavor. I always get requests for the recipe. I toast almonds, and chop them fine for the outer layer. Another alternative is toasted sesame seeds on the outside. I always do for a Thanksgiving app. Travels well and can do the day b4.
