Maple Salmon

Excellent, and oh-so-easy! Very easy to double or triple (or more) for a large group.

Tangy Honey Glazed Ham

Reviewed: Apr. 22, 2004
This was OK, but not great. I don't think the flavor penetrated the ham well at all, and I don't think the sauce was tasty enough to serve on the side. Cloves were definitely overpowering; if you try this, start with half the amount and then adjust to taste.

Chocolate Pudding Fudge Cake

Reviewed: Feb. 23, 2004
An excellent, dense chocolate cake that is better the second day (seems to oily when first out of the oven). Of the cake mix/pudding/sour cream recipes I have tried, I like this one the best. I don't think it needs 2 cups of choc chips--I prefer about 1 cup of minis. I don't care for the glaze; a good soft chocolate frosting is much better in my opinion.

Triple the Ginger Cookies

Reviewed: Apr. 15, 2003
WARNING: these cookies do not take 20 minutes to bake!! Check at 10 minutes! This is a very good ginger cookie...nice and soft and flavorful. However, I am not crazy about the candied ginger, and I still prefer my standard gingersnap recipe, so I don't think I'll be repeating this one. But if you're looking for a good cookie, you won't be disappointed.

Beat and Bake Orange Cake

Reviewed: Apr. 15, 2003
Very easy, with a good flavor, though not particularly "strong" in my opinion. My guests seemed to like it quite well. I baked it in a bundt pan for about 30 minutes.

J.P.'s Big Daddy Biscuits

Reviewed: Dec. 12, 2002
A very good biscuit recipe, but too much salt! I think it needs to be reduced to 1/2 tsp.

Baked Honey Mustard Chicken

Reviewed: Dec. 12, 2002
The sauce is very good. I suggest marinating the chicken for several hours for improved flavor, and serving extra sauce on the side.

Wisconsin Cheese Soup II

Reviewed: Dec. 12, 2002
An excellent soup, though I made a few modifications. I added garlic powder and white pepper, and a little dry mustard. Also added celery and potatoes. I think it needed about half again as much cheese for good flavor, or maybe I will try extra-sharp cheese as suggested by other cooks. I will make this again!

Crispy and Creamy Doughnuts

Reviewed: Oct. 27, 2002
This is a good raised doughnut recipe, but not extraordinary. I didn't think mine turned out too much like Krispy Kreme's. Next time I will stick with my favorite spudnut recipe.

Raspberry Almond Muffins

Reviewed: Oct. 1, 2002
An OK muffin, but nothing really special. My kids didn't care for them at all. Seemed a little heavy, and without the raspberries, I don't think the muffin would have had much flavor at all.

Chocolate Trifle

Reviewed: Oct. 1, 2002
I am generally a huge chocolate fan, but this recipe was almost too chocolaty for me. If I ever make it again, I might try adding a layer of homemade raspberry sauce to cut the sweetness a little. Or maybe add a butterscotch or caramel layer for a change of pace. It does look beautiful, however.

Beth's Orange Cookies

Reviewed: Oct. 1, 2002
Excellent, soft orange cookie. I used fresh orange zest for maximum orange flavor. I also used an orange-flavored cream cheese icing rather than the glaze; I love the richness of the cream cheese with these cookies. A wonderful change from the old standby cookie recipes!

Raspberry Lemon Muffins

Reviewed: Jul. 5, 2002
This is a good recipe, but I don't think it qualifies as spectacular. I used sour cream instead of yogurt, and that worked fine. The batter is EXTREMELY stiff; I would thin it out a little more next time. If you don't use lemon extract, you won't taste the lemon at all, I don't think.

Deep Dark Chocolate Souffle

My first souffle, and it was excellent! Not hard to do at all. My husband loved it. I served it with creme anglaise, and it was rich and delicious.

Italian Meatball Sandwich Casserole

Reviewed: May 5, 2002
Definitely had a soggy bread problem with this one. I didn't even add the water to the sauce. I let the bread dry somewhat before I used it in the casserole, but that wasn't enough. Maybe toasting would work. Flavor was good, though. Didn't think it warmed over well--bread just got soggier.

Breaded Chicken Fingers

Reviewed: Apr. 19, 2002
Very moist and tender chicken. Definitely better than restaurant chicken strips! Next time I will probably add a few more spices to the coating mixture as well. Served them with sweet & sour sauce, and they were very good.

Baked Salmon II

Reviewed: Apr. 17, 2002
This recipe resulted in a very moist fish, but I didn't think the flavor was too great. I think you could easily reduce the oil by about half, and maybe more lemon joice or some lemon zest would improve the flavor...
