PBJ Cupcakes - Berry Cupcakes with Peanut Butter Frosting

the frosting for these cupcakes was delicious. i actually doubled the peanut butter and it tasted so good. i'm not a big peanut butter person in general but i will be making this again.

Pumpkin Pecan Biscotti

This recipe was ok. It was super sticky so I had to add an additional 1/2 cup of flour. I added an additional 1/2 cup of pumpkin and a bit more cinnamon, ginger and nutmeg. The extra pumpkin and spices made it better. Some people said it made too much dough. I didn't get enough. My logs were 8" x 4 1/2" x 2" and 10" x 5" x 2". I only got 22 slices out of it. If I make it again, I'm going to have to double or triple the recipe. The only thing I really liked about this recipe was that it wasn't too sweet. I will make it again but with some adjustments.

Peanut Butter Cookies IV

I made these for my boyfriend and son. They loved them! Some of the reviews suggested adding more peanut butter. I made a double batch and used a small jar of peanut butter. That was the perfect amount. I normally don't like peanut butter cookies but these were delicious. I did watch how long they were in the oven and they took about 8 minutes. I also froze the dough like people suggested. The cookies didn't spread out too much. I also just dropped them on the cookie sheets and didn't flatten them or roll them in sugar. They were good just the way they came out. My son and boyfriend have asked that this be the only recipe I use for peanut butter cookies.

Million Dollar Cake

I love this cake! I drain the pineapple and mandarin oranges thoroughly and use the juice instead of water in the cake. It gives the cake a bit more flavor. I also chill the frosting before frosting the cake. I also make cupcakes using the same recipe so everyone gets their own individual cake. I'm a baker in my spare time and this is my most requested recipe. It's very light and refreshing.
