Made 1/3 of the batch (6 servings) and wish I'd made more since they were pretty easy and I'd already dirtied the blender and they were pretty tasty. I had the Splenda baking sugar so I used that (50% of the recommended amt of normal sugar). I thought these were pretty sweet but I don't know if it's cause I subbed in Splenda sugar or because it called for too much sugar for my tastes?

Banana Sour Cream Bread

3.5 stars. I halved the recipe for my 9 inch square pan (cooked for just over an hour) and used 1 cup whole wheat flour & 1.25 cup AP flour. Added a handful of whole pecans which I could take or leave. I also added a handful of large dark chocolate chips and I would definitely add chocolate chips next time, milk or dark.

Seared Scallops with Jalapeno Vinaigrette

Scallops were fantastic but the dressing was just ok. I like vinegar and I thought it was too vinegary. The orange went surprisingly well with the scallop and vinaigrette, but next time I'd tweak the vinaigrette more to my tastes.

Cream of Fresh Asparagus Soup II

Just ok. Agreed the fresh lemon juice was necessary and I liked adding a bit of goat cheese in place of the sour cream. I think this is just personal taste and the recipe is fine and personally, I'm not a huge fan of these kinds of soup.

Grandma's Chicken Noodle Soup

Pretty good and easy! The thing that took the most time was chopping the garlic, carrots, celery and onion and also running to the store to pick up a rotisserie chicken. I sautéed the veggies first, pulled the meat and added the broth and bones to the pot. I also boiled the noodles separate and added them and 1/2 the meat to the pot after fishing the bones out. I skipped the cornstarch and poultry seasoning and added much less salt than the recipe listed.

Chicken Breasts in Caper Cream Sauce

Doubled the cream and used slightly less butter than called for and it turned out fine. Almost too much sauce in fact. Overall, pretty good and easy to make. Quite creamy though!

Apple Pie Muffins

Pretty good, but I did alter it. I did 1/2 whole wheat flour and 1/2 AP flour. I used 1/2 cup of leftover milky whey mixed with 1/2 cup whole milk as the buttermilk and used big swedish sugar as the topping. Next time, I'll follow the recipe and use the topping including cinnamon.

Black Magic Cake

I made this cake to try to use up some leftover milky whey after making ricotta! So for the cup of buttermilk, I put 1/2 cup whole milk and 1/2 cup of my leftover whey. So I didn't follow the recipe entirely but the cake turned out pretty good. Nothing spectacular but it was easy enough, so I suppose I could make it again sometime.

Artichoke Spinach Lasagna

Pretty darn good! I didn't have spinach so I substituted in lots of fresh kale. And used homemade dried rosemary instead of fresh. I didn't boil my noodles beforehand and it turned out fine. I kind of liked the feta on top but I don't think it needed it. With it, the dish was pretty salty and I didn't add any salts to my sauteed veggies or anywhere.

Banana Crumb Muffins

Pretty good! Used 4 med-lg bananas, 1/2 ap flour & 1/2 whole wheat flour. Added cinnamon, nutmet & vanilla to the batter. Made 12 full muffins, cooked for 23-25 mins.

Quinoa with Chickpeas and Tomatoes

Threw in some marinated artichoke & its juices/oil instead of olive oil. Added some truffle oil. Used the zest & juice of 1/2 a lemon. Threw in halved grape tomatoes & added some green onion & cilantro!

Pumpkin Pancakes

Quick Berry Milkshake

Should have read the reviews saying you don't need the ice. It was way too icy. And prob too much vanilla too. This didn't taste like a delicious milkshake made with ice cream. Wouldn't make this again.

Coconut Macaroons III

Pretty easy/quick. I halved the recipe and got probably 20 golf ball sized cookies. Followed the recipe, except used a splash of vanilla & almond extracts. Also, some reviews recommended putting the dough in the fridge, and I thought I should have since the dough started getting stickier and stickier, but after making them, I realized the ones that didn't look like nice and clean were much prettier and yummier (since the ends that stuck out were nice and crunchy).

Cooked for 25 minutes, made the recipe as specified, except 1/3 whole wheat flour instead of all AP flour, and extra apple (since 1 apple is ~ 1 cup of chopped apple, not 1/2 cup) and didn't have brown sugar, so used all white sugar and used probably only 3/4 of the sugar listed.
