WOW! YUM! This was super delicious and easy to make. I followed this recipe using 4 skinless chicken breast halves and only 2 tablespoon of Smart Balance butter. Also, since I didn't have any curry powder, I used about 2 tablespoon combination of chili powder, cumin and coriander. I marinated the chicken for 3 hours then baked in a closed foil for 30 mins. The remaining 40 mins, I opened the foil, added chopped carrots and potatoes then basted the chicken and veges every 15 mins. The chicken came out very tender and flavorful. I poured the sauce over the chicken and veges and served this with brown rice. I would definitely make this again and would recommend it to anyone.
