Orange Pecan French Toast

Oh my... I'm glad that I tried this recipe! The flavor was lovely, and Hubby wants it again even though I made a bit of a mess out of it. For the record, do NOT use regular sandwich bread (I didn't have any crusty bread on hand). Not surprisingly, it comes out mushy. I am planning on making this again, but with crusty bread!

Tofu-Stuffed Lasagna Rolls

I followed this recipe as written in order to give it a fair review, with the exception of layering the ingredients like a traditional lasagna instead of bothering with the rolls. It was a bit bland for my husband's and my tastes but it gets serious kudos because our toddler ate it. We "rescued" the meal by adding garlic powder and decided that if I ever make it again, it'd be improved by adding onion, garlic, mushrooms and additional sauce.

Butternut and Acorn Squash Soup

Lovely soup! The best part about this recipe is how easily it is adjusted to suit each family's tastes. I took the advice of another reviewer and waited until the end to add brown sugar, bit by bit until I reached the level of sweetness that was right for us. I also used 4 oz of Neufchatel cheese instead of 8 oz cream cheese and only about half a quart of chicken broth. Thank you for this excellent and versatile recipe!

Soft Sugar Cookies IV

As my great-grandmother used to say, sugar cookies bring out the best flavors of tea by not competing with it! So, don't expect this recipe to produce a highly-flavored cookie. Instead, enjoy them with tea. :) While my G-G'ma made the traditional crispy sugar cookie, I tried this recipe because my husband prefers soft cookies. I tried patting out the dough and using cutters (my 2.5 year old was helping), but it wasn't firm enough -- next time I'll try refrigerating the dough for a while. Even as drop cookies, these are enjoyable and oh so soft! I bet they'll be perfect with tea!

Orange Cake

In an effort to find just the right cake for an upcoming event, I tried three different recipes from this site. I didn't frost or glaze any of the cakes, including this one, since we just wanted to evaluate the cake. My official taste-tester (Hubby) declared this one the winner! The only change I made was to use orange extract instead of lemon. I baked cupcakes, which took 25-30 minutes at 325 F. I'm looking forward to making this one again!

Dutch Babies II

Since my toddler is very picky, I decided to have her 'help' me cook. I chose this recipe because I remembered being fond of it as a child, plus it was easy for her to pour all the pre-measured ingredients into the bowl. She was fascinated with the "fluff" and ate it up! Hooray!

Brownie Crackles

Tasty! Several other reviewers have complained about the batter being difficult to roll. It is sticky, but there is an easy technique that will make rolling it a cinch. First, drop some cookie dough into a bowl containing the confectioner's sugar. Scoop up some of the sugar with your fingers and sprinkle it on top of the dough. Now pick up the sugar-coated dough and roll in your hands. It won't be sticky any more. I chose to flatten my cookies a bit before baking, and it made for a lovely presentation. Update: I took some of these cookies into work today. My coworkers *devoured* them! I'll definitely be making them again.

Quick Quiche

Wonderfully easy and a cinch to throw together! It came out lovely and fluffy - almost like a souffle! I usually make the recipe exactly as written the first time in order to give it a fair review, but this time I made some changes based on the ingredients that I had on hand (e.g. ham instead of bacon, other veggies, etc.). As myrite suggested in the introduction, it's an easy recipe to adapt to your own personal tastes!

Crisp Little Lemon Cookies

These cookies were easy and quick to make and had decent flavor - however it was a bit "artificial" for our tastes. I'm sure that had more to do with the brand of cake mix that we used than this recipe. I may try again with a different brand.

Melt-In-Your-Mouth Meat Loaf

I grew up on an old dried-out variation of meatloaf and disliked it so much that I haven't cooked a single meatloaf in my adult life. That was until I found this recipe and thought I'd give it a try. I'm so impressed that I *will* be making this moist meatloaf again. It was so tender that it broke up a bit as I lifted it out of the crock pot. Next time I'll line the pot with strips of foil that hang over the edges to make it easier to pull the loaf out. I used raw onions as I didn't have any dehydrated and think that I'll add some chopped mushrooms next time (per Hubby's suggestion).

Fluffy Pancakes

These were fun pancakes to try - my 2.5 year old helped me mix the batter together and was excited to eat them when they were cooked. I thought that the dough was a bit too thick, but tried it without thinning - they came out just fine!

This recipe was fast and easy to throw together. I didn't put in the pimentos or parsley. Hubby and I chose to add a little extra flavor - he added a dash of Tobasco sauce and I chose black pepper. Next time that I make it, I think that I'll use more onions and some sweet peas. A little garlic might be nice too.

Aunt Gail's Oatmeal Lace Cookies

These cookies remind me of Sandies with their tender, crumbly nature. They tasted wonderful - my coworkers devoured an entire batch in one day! I couldn't figure out how to roll the dough as it's very sticky. Instead, I just dropped it by rounded tablespoons onto the prepared sheet and then gently poked it into a round shape before squishing it flat with the bottom of a glass. I think these cookies would be great for Christmas with colored sugar on top.

Cocoa Oatmeal Cookies

Yummy! Hubby had a cookie craving and was about to dash off to the store to buy some when I suggested making some at home instead. We had all the ingredients on hand for this recipe, though we decided to forgo the raisins. I might try doubling the cocoa powder next time and/or adding chocolate chips. Delicious! Thanks for the recipe.

Quiche

I loved how fast and easy this quiche was to make! I haven't tried freezing it yet, but might double the recipe next time and freeze one of them for a fast and easy meal. The only reason I didn't give it five stars was that it was a touch bland for me. I might add some onions or other ingredients to it next time -- that said, my toddler ate it up!!

Applesauce Cake I

I came across this recipe after searching for something to make with my 2 year old using leftover applesauce. We made it as written, with the exception of obmitting the nuts. For us, this cake came out nicely! It had just the right texture and amount of moisture to be a sweet breakfast bread. I think the quality of this recipe depends strongly on the applesauce that you use. We used an unsweetened applesauce that was a bit tart. The cake came out beautifully - just the right level of sweetness for us! There wasn't any need to add a confectioner's glaze. I got up this morning to discover that Hubby had helped himself to three pieces, so this recipe is definitely a keeper!

Easy Lemon Cake Cookies with Icing

Fast and easy! The dough was too thick for my 2.5 year old to stir, but she still had fun scooping the dough onto the cookie sheet. We didn't bother with the icing as our cookies were sweet enough without it.
