Quinoa Black Bean Burgers

I've never had vegetarian burgers before, so I was kind of skeptical. But since I (like usual) was looking for a recipe to use extra pantry items (black beans, bread crumbs), I was excited to discover that these were great! They are much healthier than "regular" burgers, plus they are WAY cheaper. We used organic everything for ingredients, and there's no way it would come close to the cost of organic meat! The cumin & hot sauce was a delicious extra!

Shrimp Couscous Salad

I hate raw green peppers. And this was amazing!! We just made it for our family of four: husband=okay, 5yo daughter=thumbs down, 20mo son=pretty good (he eats a lot), me=excellent. Plus, it was really easy to make. I ate it for lunch all week b/c all I had to do was scoop it into a bowl. :-) NOTE: It isn't actually ready in 35 minutes. The last step says to chill for 2 hours. Yeah, didn't see that...

Cheese Stuffed Mushroom Appetizer

They were a little too "cheesy" for me, but my friend liked them a lot! Like some other reviews, I changed the goat cheese to feta & the onion to green onion. (Although I do love goat cheese!) I also changed the butter to olive oil & used much less. I think the only other thing I might do differently is to maybe up the time under the broiler to 10 minutes--I added 2 more minutes after the 5 minutes & I still thought they needed more time.

Appetizer Stuffed Mushrooms

3 stars ONLY because it was way too salty for our tastes. Maybe next time I will try garlic & onion powders instead of salts. (Or maybe one of each.) It was still tasty & we will definitely try them again when we need an appetizer.

Pork Sausage and Cabbage Pitas

I had a head of cabbage from the garden & pound of pork sausage I needed to use, so I thought this looked like a simple solution. It was! The only thing that was even remotely "hard" was the effort in grating the cabbage--maybe 7 minutes. The first bite was alright & then it just seemed to get better & better with each bite! We used the new Earth Grains "Thin Buns" instead of pitas, but used halves & kind of wrapped them around the "filling" like a pita--fantastic!

Grandma Carlson's Turkey Pot Pie

I found this to use up all the random items in my fridge--success! I even had my in-laws for dinner and EVERYONE (including young kids) really loved it. The only problem I had was that there was only one slice left for leftovers! :-(

Italian Sausage, Peppers, and Onions

Smelled AWESOME, tasted okay. It seemed like it was missing something. I think it would be really good on pizza or mixed with some scrambled eggs for a breakfast burrito, though.

Terrific Turkey Chili

Yum yum! We used the "Taco Seasoning I" recipe on this site b/c we didn't have a packet, and it was GREAT! The only thing we changed was not adding the zucchini, and that was only because we actually ATE all that was in our garden. (Weird, I know.) This was absolutely delicious.

Sweet Potato Cookies II

Glad I read the reviews first! I mixed in about a tablespoon of water after the final mix, and ours turned out delicious & moist. I'm so glad to have found a cookie with so little sweetener. Wonderful!

Zucchini Alfredo

This is a good way to use extra zucchini--simple, filling, decent taste. However, I don't ever think I'll say, "I can't wait until we get more zucchini so we can make this!" We used frozen, shredded zucchini from last summer's garden. And just FYI, we're not at all big salt users, but this recipe definitely needed a lot of salt--we probably used about 2 tsp "to taste"!

Turkey Salad Tortillas

Excellent! I even opted to not microwave since it was SO HOT yesterday, and it was still tasty. We did 1/4 c low-fat salad dressing (although sour cream would've been better if I had remembered to restock!), and subbed fresh chopped tomato & some taco seasoning for the picante. Today I had one for lunch (cold like yesterday) & added some lettuce from my garden for extra healthiness. Yum!

Bierock Casserole

Bierocks are Runzas! Only this is way better than the ones I had at college in Nebraska! This was a quick, easy, filling meal. My husband & I scarfed it down, my 18mo son loved it, but my 5yo daughter wavered back & forth. I don't think we used enough cheese (we shredded our own & didn't know the equivalent), so next time we'll put in more. We used the suggestion of baking the crust first and making "gravy". Only problem is that it's not nearly as good leftover, so eat it while it's hot!

Yes, yes! My husband loved this, and the rest of our family(including young kids) thought it was good, too. My only issue was that there was WAY too much oil. I think next time I will halve it.
