Slow Cooker Chicken Taco Soup
I just cooked this on the stovetop. Cooked the chicken in olive oil, adding the onions, one clove of garlic, and the taco seasoning during cooking. Added all the other ingredients then, but used what I had around: one 28 oz can of diced tomatoes, one 8 oz can tomato sauce, 8 oz of chicken broth, two cans tri-color beans. Also used Trader Joes "burnt corn" (frozen), one bag. Two large chicken breasts were enough.

Salsa Chicken Burrito Filling
Used 3 frozen chicken breasts, the homemade taco seasoning, 2 (8 oz) cans tomato sauce (next time try just one can), fresh chopped onion, 2 fresh chopped garlic, 1/2 jalapeƱo, omitted the hot pepper sauce, (left other ingredients the same) and threw everything in the crock pot on high for about an hour, then low about 3 hours. Felt the chicken was getting tough, so put it on warm another 2 hrs before shredding the chicken. Mixed it back in with the sauce and kept on warm until we ate it about another 2 hrs. Chicken wasnt tough at all, had a really good flavor! Maybe would use more fresh ingredients to fancy it up a bit, but as it was perfect for its simplicity and great leftovers! Made awesome burritos except for the extra sauce making it kinda runny.

Baked Parmesan-Crusted Chicken
Super easy and very yummy. I simplified a little by melting the butter and garlic in cast iron and placing the chicken back in it to bake. I cut the chicken into tender-sized pieces and it baked in about 28 minutes. Used dried italian herb mix - 3 tsp - and it turned out fine. It had a little too much butter in my opinion, so next time might try just a half cup.
