Spinach Ziti
This is a fabulous, super quick, brainless recipe. That said, I definitely altered the original. I added nearly the entire 8 oz. of cream cheese, 9 oz. of spinach, and doubled the stewed tomatoes. I added basil, Italian seasoning, extra red pepper, Frank's Red Hot, fresh garlic, and at least a half cup of julienne sun dried tomatoes. The result was delicious, though I probably wouldn't add the full 8 oz. of cream cheese again - way too creamy (though definitely delectable). All in all, a perfect recipe for a work night. Bravo! :-)

Apple Cinnamon Oatmeal Bread
This was good, but waay too sweet for my personal tastes, even though I used Splenda. It was more cake-like than bread-like. I thought the two packets of oatmeal were overkill and a bit too sickeningly sweet and fake. Next time, I'd cut them in half - as well as the sugar, and use whole wheat flour. If you like super sweet quick bread, though, this tasted great. :-)

Garlic and Ranch Turkey Burgers
The flavor was great, but these burgers fell apart instantly on the grill. I followed the recipe, but added 1/4 cup breadcrumb, as others suggested. We ended up having to move them from a grill to a pan inside because they were disintigrating. My husband managed to keep them together, but it was tough. These are missing something...
